I've never used a kit so I don't know if those are easier. I used gingerbread flavored graham crackers and store bought frosting to build it.

I have done the kit and I find it hard to use. The icing gets hard really fast and doesn't allow for good sticking. I definitely recommend doing it yourself.

Really?!? Boo! I just got a kit while I was grocery shopping today. Oh well, guess we'll try it anyway and see how it goes. Worse case is we get frustrated and pitch it

I agree with this. I tried using a kit a week ago and it got too hard too quick and the whole thing wouldn't stand up I was so disappointed. But on the same note, I have used a kit a few years ago and it worked just fine. So maybe it depends on the kit?
Good Luck FP with your gingerbread house!

FP - I'm sure you could thin the icing a bit before using it with a bit of water. Looser icing should take longer to dry and therefore allow some more time for the stickaliciousness to develop .
I hope it turns out well for you!

Ok, so I talked to my mom today (we are going to make it together when she gets here) and we just decided to go ahead and have some extra store bought icing on hand and use that in case the stuff that came with it doesn't work. I'll let you all know how it turns out, fingers crossed.

Same here...you may have inspired me to try and squeeze one in before Christmas!

This may be the stupidest (most stupid???) question ever but..do you eat the gingerbread house? or is it more decorative...I've always wondered about that...

It might be a little stale if you don't eat it right away. I put mine on display until after Christmas. I just threw mine away today. It was a little hard for me to throw away, but they don't store easily.
