One of my coworkers is having a holiday open house this afternoon and I plan on going. The invitation says its a potluck and I have no idea what to bring. Can anyone suggest a tried and true recipe that is relatively easy (don't have much time to make it). I am hoping for something that doesn't need to be heated and can be taken in some sort of disposable container because I don't want to stay too long and I'd rather not leave a nice serving plate there.
I usually dress up something from the grocery store and call it a day.
Here are two suggestions:
Tomato-Mozz salad.
SLice tomatoes, and alternate on a plate with sliced fresh mozz. Spoon a line of pesto down the middle, crack pepper over top, and either drizzle on evoo and balsalmic vinegar or Newmans dressing. It's festive (grren, red and white), easy, yummy, and fairly healthy. I put it on a cheap dollar plastic platter and leave it behind.
Dressed up hummus.
mix hummus with roasted red peppers from a jar in the food processor (drain peppers really well) or stir in pesto. Serve in a bell pepper instead of a bowl. Put pita triagles and carrots (baby of course, straight from the bag) and celery on a plate and call it a day. Also fast, easy and pretty healthy.
