green inside a potato?
Permalink Closed

I just bought and baked organic potatoes for the first time.

So I cut it open, mushed it up, and proceeded to eat it. But there's like this green stuff on the inside of the skin, between the brown and the actual white potato insides. I've never seen that before... is that because my potato was organic, or was that just a bad idea to eat it? Or am I going crazy?

You know how it recommends keeping potatoes in the dark? The green means the potato has been exposed to too much light and has begun to create chlorophyll (the chemical in plants that makes leaves green, etc). Its not bad, its perfectly edible.
