Quick Easy Recipes for a New Cook

Hi everyone! I just started my first real new job and I think I'm old enough to finally stop eating crap frozen food. But I'm a real novice in the kitchen. I was wondering if any of you had any recipes you wanted to share-- very simple, fast recipes I could make on a weeknight that wouldn't stress me out. Any ideas?

Although a lot of people hate her, I've found that Rachael Ray has some great easy recipes! I was given one of her cookbooks a while back and have found a number of inexpensive but tasty meals to make. If you go to the Food TV website you can search for recipes from her show. As I've gotten a bit more into cooking, I've also fallen in love with the website Epicurious, which has every recipe you could possibly want! Although a lot of their are complicated, there are plenty of easy, fast and healthy ones -- you can just search for quick or easy meals.

A friend gave me a really great recipe book that I'd highly recommend.  It's called All Recipes.com - Tried & True Quick & Easy Top 200 Recipes.  You can also check out allrecipes.com for some great ones.

While I find her rather annoying, Rachael Ray has some very good, quick recipes in her cookbooks.  I also like epicurious - they have a good selection of quick recipes as well.

I make an enchilada pie that reheats very well.


You put a splash of enchilada sauce in the bottom of a glass pie pan, then toss in a tortilla, then layer in your usual enchilada ingredients (beans from a can, shredded cheese, sliced veggies, already cooked meat meat) in between layers of tortilla, each time putting a splash of sauce in between. Top with a tortilla, the remaining sauce (it will drip over the edges of the tortillas into the bottom of the pan, and a layer of cheese, then bake in an over or even toaster oven until it's bubbly, at about 350.


That way you can just slice out the amount you want, and it reheats really well in the microwave.


I usually used either refried beans or really well drained black beans and cheese in one layer, then another layer of cheese and peppers, tomatoes and green onions. I use Old El Paso enchilada sauce.


It's gringo, but pretty tasty.

Ditto on the recipe for this one!!  That would be a great guilty pleasure dinner treat!!
