I use spices from my own cabinet...chili powder, red pepper, cumin, tabasco sauce, a little sugar. I think there's one more, maybe paprika. Super tasty. :)

do you have any loose guidelines you can share- like- only a few drops of tabasco? i know most people can do this by taste but i don't want to mess something up drastically.
I found this recipe for Wendy's chili on top secret recipes. I'm planning on making it this weekend.
Wendy's Chili
2 pounds ground beef
One 29 ounce can tomato sauce
One 29 ounce can kidney beans (with liquid)
One 29 ounce can pinto beans (with liquid)
1 cup diced onion (medium onion)
1/2 cup diced green chili (2 chilies)
1/4 cup diced celery (one stalk)
3 medium tomatoes, chopped
2 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water
Brown the ground beef in a skillet over medium heat; drain off the fat.
Using a fork, crumble the cooked beef into pea-sized pieces.
In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat. Cook, stirring every 15 minutes, for 2 to 3 hours.
I usually make my chili roughly according to the below recipe from allrecipes. It is soo good. I usually cut it down about because the recipe makes a whole lot of chili. Also, I don't use cubed sirloin or oil when I am cooking the beef. I really like the mix of spices the recipe calls.

Yes, cocoa powder is great in chili! This is my all-time favorite recipe for chili: http://www.epicurious.com/recipes/recipe_views/views/3090. Making the chili with turkey instead of beef is a lot healthier but tastes just as good in my opinion.
I start out with a couple tablespoons of chili powder. About a tsp. cumin & red pepper. Tbs. of sugar. A few shakes of tabasco. Then I work from that. Taste it and see what it needs. HTH :)
