I made this meal last night and would love to share:
Shrimp with sundried tomatoes and basil - unbelievably tasty and fast Sauteed asparagus Polenta
The whole meal looked wonderful and was pretty balanced and yummy. Also easy and quick to make. Polenta was the only thing that took a while but I didn't make it the tradional way with a lot of stirring and still turned out great. Just simmer covered and stir once every 10mins.
Shrimp recipe:
approx 1lb peeled and deveined shrimp 1 1/2 tbsp olive oil 2 tsp minced garlic 1/3 cup dry white wine/ dry sherry 1 tbsp fresh lemon juice/ lime juice 2 tbsp chopped sun-dried tomatoes packed in oil 6 tbsp butter 1/2 cup chopped fresh basil
Sautee shrimp seasoned in salt and pepper, till just done. Remove from pan - then sautee garlic, add wine/sherry lime juice and sun dried tomatoes and simmer until the liquid reduces to about 1/3rd its quantity. Turn down the heat and add butter and garlic. and the liquid sort of thickens - add in the cooked shrimp and Voila! Took about 10mins total cooking time and was DE-LI-Cious.
I didn't have enough fresh basil so added some dry a little before the fresh one so it soaks in the liquids. Also used lime instead of lemon - prefer the flavor and that's what I had on hand. Same with dry sherry instead of recommended dry white wine. I keep dry sherry for just this kind of cooking purposes. My other cheat was with the sun-dried tomatoes, didn't have any in oil just dry ones. So cut them up a few minutes before and soaked them in the sherry before adding it to the pan!
