I hate vegetables. The only ones I like are corn (more of a grain, if you ask me), tomatoes (actually a fruit but still very good for you) and fresh spinach (in salads). I am pretty sure I hate all other veggies--and I cannot think of one that I haven't actually tried, and I cannot think of different ways to eat them that haven't tried (topping them with cheese, making special sauces, incorporating them into other foods, etc).
I have never liked to eat vegetables but I am 24 now and know how good they are for you. My mom was the same way and forced herself to eat them until she came to love them. Unfortunately I do not think I can ever do this. I know I need the health benefits that come from veggies--is there a way I can ever learn to like them?
I do try to drink a low-sodium V8 every day but I don't think that is going to cut it. I need real veggies every day, don't I?
I don't really have a suggestion for you, but I am the same way. I only really like avocado (a fruit?), tomatoes (def. a fruit), corn and green beans. I do actually enjoy vegetables when they're mixed with other things (like in, say, a stir-fry type dish or a casserole-type dish), but I can't just snack on veggies alone.

another good way to get one in it to add shredded zuchinni to ground beef when making a burger. I promise you won't even notice that it's there- and it'll make the burger really juicy as an added bonus!
Even though I like veggies, I don't get enough so I try to sneak them into other things. Like last night I mad Penne with tomato sauce, but I doctored up the tomato sauce with zucini and olives and artichokes and mushrooms and then ran an emersion blender through it. You can do the same with burgers or meatballs - just chop the veggie really finely and toss them in with the meat!
What about sweet potatoes or yams? We make yummy oven fries out of those. Or what about a greek salad? It has tomatoes, cucumber, red onion, olives, and feta in it.

Oh yes, I have tried them practically any way you can make them--my mom always made tons of veggies when I lived at home.
But I like the idea of adding shredded zucchini to my burgers--I will definately have to try that.

JacL, I'm not crazy about vegetables either..... in terms of your question about how healthy yams/sweet potatoes are -- they are very good for you and have lots of vitamins. It is important, if at all possible, to eat a variety of veggies, ie, green ones, red, yellow, etc, because each color family tends to offer different nutrients.
I suggest sticking with your favorites from each color category. You said you like fresh spinach, so you can eat that as well as sweet potatoes, corn, tomatoes, and get a decent range of the health benefits. You can also take a multivitamin each day. I also agree with the other girls about tossing shredded veggies in with meat. You won't even taste them there
I am not crazy about them either. What about eating salads? That's how I get a lot of my veggies - I eat salads practically everday at work and they're packed w/either romaine or spinach and thinks like cucumbers, black olives, tomatoes, avacado, corn....in salad it can be chopped up very small and I swear - it's actually good.
Also, what about eating cold carrot sticks w/fat-free ranch dressing? Or celery w/lo-fat peanut butter? Those are two things I actually enjoy.
