my mom is on weight watchers too, so i figured out the pts. for her and e-mailed the recipes to her. i thought i would share.
Honey Lime Chicken 4 pts. per chicken breast
Servings: 4
4 Tbsp. of Honey- 4 pts. 4 tsp. of Lime Juice- 0 pts. 1 tsp. of chili powder- 0 pts. 1 tsp. of cinnamon- 0 pts. 1 Tbsp. minced garlic- 0 pts. Sea Salt -0 pts. 4 3oz. chicken breasts- 12 pts. Cooking Spray- 0 pts. (i think since you use a small amount)
mix all the ingredients and pour over the chicken, or let marinade for 24 hrs. put in a pan lined w/foil and sprayed. bake in the oven at 350 for about 35 minutes.
Note: there are variations, you can do soy (i love honey/soy on salmon), or you can use cumin. also, these are not precise measurements because i eyeball everything.
Chicken Ceasar Wraps: 4.5 pts. per wrap (4.68 pts.)
Servings: 8
1 cup of brown minute rice- 4pts. 1 lb. of chicken- 16 pts. lettuce-0 pts. 8 Tbsp. (per wrap)Ceasar Dressing (i used Cardini light)- 8 pts. 8 Whole Wheat Tortilla (small size)- 8 pts. 1 tsp. olive oil (enough to coat the pan)- 1.5 pts.
Cook brown minute rice. Cut chicken into tiny pieces (i mean tiny...i use scissors)., and cook in a pan for till they are lightly browned. heat tortillas. add lettuce, 1/8 cup brown rice, 2 oz. of chicken, and 1 Tbsp. of dressing to each tortilla. (or whatever amount fits). i usually eat with a salad (lettuce, mandarin oranges, craisins, feta, chow mein noodles and rasp. vinegarette dressing).
