its just for my bf and i, but i also want enough to pack for lunch as well (trying to save $$). i was thinking casseroles, meatloaf, lasagne, etc.? i am not a veg. and am not particularly picky in what i eat. thanks!
How about turkey? Buy a big one, cook it, and you'll have leftovers for a while. There's turkey sandwiches, turkey in salad, turkey salad with mayo...I find that it lasts a long time...and turkey isn't only for Thanksgiving.
Ok then I have some for you. My bf and I have been doing the same. I can usually get 4-5 meals out of any hamburger or tuna helper. Those are quick and easy.
As far as casseroles go I will check some old posts I've either posted or tried and they were great (and made a few extra servings) and link them here tomorrow. Also check out the cheesy chicken and rice one I posted a couple of hours ago. It came out fabulous and makes 6 servings. Definetly freezable also. I'm making laken's pork tenderloin for dinner tomorrow. I'll report back :)
I'll also check my grandma's cookbook tomorrow and post some things she had in there. I know there is a great broccoli cheese soup one that freezes well and makes quite a bit of soup.
What grocery stores are in your area? I find kroger is a tad cheaper on packaged things than heb but heb has better meat deals. I don't know if you have either but definetly shop around for the best deals in your area.
This will get you started. I've made all but one of them (noted below) so if you have questions just ask. I'll start posting other recipes I try on here more often. I usually get 4 to 5 servings out of everything I cook with the way I portion it out or add a tad bit more into the recipe.
Moc Chicken cordon bleu. I usually can make 6 of these with 2 wedges of cheese and 1 package of deli ham. They travel well.
