I didn't have time for breakfast so my eating is off center today already S: Apple jack knock off cereal - 3 pts
As little as possible since tonight is weigh in. And since I read that article about how much the food weighs before you digest it I just can't bring myself to eat much on Tuesdays. Lots of water.

I'm back girls and I'm really trying hard so give me some food ideas too!! I weighed myself today as my starting day and I hit 140 which means I have to lose 10 pounds to be happy and 15 to be completely happy.
B: low fat bagel with whipped mixed berry cream cheese and sugar free koolaid (4 pts)
L: lean pocket, apples and carmel, fat free pudding (9 pts)
D: Cheesy Chicken and Rice (from Dotties site) 5 or 6 points with salad (2 points) and maybe half a baked potato (2 pts)
E: 30-40 mins of cardio tonight and some weights in the apartment.
I'm trying to remember to drink my water but its so hard.
E: Today is my off day, and I'm still plenty sore from yesterday! I modified the HIIT workout even further, since the original wasn't too friendly to my arthritic knees. It's much more manageable now and I feel like it's something I can really stick with.
My even more modified version, for other decrepit old people like myself:
2 min - Walk @ 3 mph
4 min - Walk @ 3.5 mph
4 min - Walk @ 4 mph
10 min - Run @ 6 mph for 30 sec, rest 30 sec, repeat
4 min - Walk @ 4 mph
4 min - Walk @ 3.5 mph
2 min - Walk @ 3 mph

elle - few questions 1. what kind of soy sasauge do you use and how do you cook it? 2. how do you make honey lime tilapia? 3. what is in that salad you are making?
1. The sausage is by Lightlife Gimme Lean! - we get ours in the produce section by the organic veggies. It comes in a 1 lb tube. It's by far my favorite brand. Such a believable texture it's amazing.
2. Juice from one lime, a tablespoon of honey, little salt and pepper, and some chili powder - turn it over in that a couple times and cook it on medium heat for 3 minutes each side in a tad bit of olive oil and a tiny pat of butter.
3. It's a Rachel Ray recipe and it is to die for! Makes 4 big servings.
Warm Black Bean and Corn Salad
Olive Oil
1 onion, chopped
2 garlic cloves, chopped
3/4 teaspoon crushed red pepper flakes
1 teaspoon ground cumin
Salt and pepper
1 lime
1 teaspoon chili powder
1 bell pepper, seeded and chopped
1 10-oz box of frozen corn, defrosted
1/2 cup chicken broth
1 can black beans, drained
handful of chopped cilantro
1 bag of baby spinach
Preheat a skillet over medium heat w/ 2Tablespoons Olive oil. Add onion, garlic, red pepper flakes, cumin, salt, pepper, and chile powder. Cook stirring occasionally for 3 minutes. Add the bell pepper and corn and cook for another minute. Add chicken broth and cook for another 2 minutes. Add black beans and cook until beans are just heated through. Remove skillet from heat and add the lime juice and cilantro. Put the spinach in a large bowl, and poor the warm mixture over the spinach. Toss to wilt the spinach and adjust seasoning if needed.

elle - oven or pan fry that tilapia? I might try it this weekend. It sounds yummy and I have all the ingredients already!!
Pan fry - adds a little more fat then baking does, but it's so low fat to begin with and so is the salad, I think it's worth it! I've never tried baking it before - how does it turn out?

not to completely hijack the thread...
I broil it in the oven for a few minutes on each side and use blackening seasoning and spray butter. It is very delicious. Served with steamed broccoli.
