Thought some of you might enjoy it. You can also add chicken or ground beef or even serve it as a side dish.
Southwest spaghetti
8oz spaghetti, cooked (I used angel hair)
1 can black beans
1 jar picante sauce or salsa (16 oz)
1 cup cheddar cheese (I used lowfat and probably a little less than a cup)
A little cheese to sprinkle on top (I used shredded parmesan)
Just mix it all up in a casserole dish and sprinkle the parmesan on top. You can either chill it overnight and serve cold or cover and bake it at 350 for about 30 minutes. I took the lid off and broiled it for a few minutes to let the parmesan get bubbly.
