I was watching the Food Network today and craving a mini pizza for lunch, but didn't have anything remotely resembling pizza ingredients, or so I thought. So I invented my own pizza and it was good and pretty healthy.
Anyway, here's what I did:
Set the oven to 350.
Cut a pita in half and opened the pita up so the inside part was facing up.
Spread a few teaspoons of ricotta cheese on top of the pita.
Pitted and chopped a handful of marinated olives.
Put the olives on top of the ricotta.
Placed a slice of pepper jack cheese on top.
Put it in the oven for 7 minutes.
It was so good! And it'd be really easy to make a ton of versions of it with chopped artichoke hearts and roasted red peppers as the topping, or by mixing fresh herbs into the ricotta, or by topping w/ mozzerella and parmesean. I could also envision doing something like this as appetizers for a party.
I have done something similar with an english muffin, a spoonful of spaghetti sauce from an already open jar in the fridge, and shredded cheese...then add whatever else...i like spinach on mine. i love the Food Network, i get so many ideas from there.
