1 package frozen chopped spinach, thawed and squeezed dry 2 eggs 1 cup dry plain bread crumbs 1 1/2 cups ricotta 1/3 cup grated parmesan 2 scallions with tops chopped fine 1 clove garlic, minced salt to tast 1/2 to 1 tsp 3 tbs fluor some pepper, parsley, basil small amount of nutmeg
Mix all ingredients in a bowl (it might be easier to do the dry ingredients first). Shape mixture into 1 inch balls (flour hands first to prevent sticking). Place on plate and refrigerate for 30-45 minutes. In a large pot boil salted water. Drop some balls (don't crowd) into water which should be at a low rolling boil. Boil 3-4 minutes until the balls rise to the top. Remove with slotted spoon.
I used the standard small box of frozen spinach and they came out well but I swear when my grandmother made them they were a lot greener so I'm trying to find out if she uses a bigger package of spinach.
OMG. I have to try those. I am a huge sucker for anything with ricotta. I love anything with spinach and garlic too, so these sound right up my alley. Thanks for passing along the recipe!
