I hate to say this but I really don't like risotto. Like I ordered it at Commanders Palace in NO & was really really disappointed. But I'm not really a rice person either so take that for what it's worth. On the other hand, I really really like couscous- it comes in tons of flavors, is about $2 for a box & is EASY EASY. So maybe that's an alternative? Especially if you aren't feeling like experimenting with something that might be hard.

I love risotto but not alot of people do, I think. IMO its not very good for a dinner party b/c you have to stand over it on the stove and it can't sit for very long. I'd rather make something that doesn't require so much attention.
I love risotto! Its not hard, but it is time consuming. And after I spend ages cooking, DH called it rice-a-roni so I will never make it for him again.
couscous is a good idea too and is much quicker to make.
i like trader joe's mushroom and herb risotto. i *think* i read about it on here and decided to try it. it's pretty easy to make, and i forgot the other kind that they make, maybe an asapargus one? it's definitely worth trying...

Oh I love it! My mom makes the best. She made it while visiting me this Christmas and made me watch her do it so I would know how to make it. She puts asparagus, red pepper, saffron, and parmesan in it (along with chicken broth). Like the others said it's very time consuming as you have to constantly put the broth in it and let it absorb, etc. Anyways, I love it and if you have time to make it, you absolutely should!

I love risotto - In fact BF made the exact dish of sea scallops in almost the same sauce and risotto - into which I asked him to add artichoke hearts that I had. It was delicious!
I agree though that risotto is time consuming but if your friend is the kind you wouldn't mind having in the kitchen chatting while you watch over the risotto it's a great combo.
