b: slice of toast (on my new favorite, ezekial 4:9 sesame bread) with natural peanut butter, handful of raspberries, water
s: light n'fit blueberry yogurt
l: probably a tuna wrap with mustard, lettuce, tomato, 1/2 bag of baked doritos (left from yesterday), diet coke - i have to cut it out, but i'm starting by limiting myself to one a day, at lunch
d: i'm thinking a salad - greens, peppers, cukes, carrots, avocado with roast turkey, balsamic vinaigrette (sp?) with cottage cheese
s: carrots and hummus or some kashi TLC crackers (yum! these are good)
e: a routine from fitness mag that'll do until my gym membership kicks in

I wasn't going to join in because w/ my weight loss results yesterday I was all happy. Well, I decided I wanted baked sweet potato fries- I have no idea why - I've never made them in my life. Well, I used that pampered chef ultimate slice & grate to make them like scalloped potatoes & I sliced my finger pretty dang bad. After an hour & I still couldn't get it to stop bleeding, I called the doctor. My doctor's office was out to lunch. THE WHOLE OFFICE. And ER copay is $150. So I went down the street to a new doctor's office & had to get stitches. The first stitches of my life. And they put a numbing shot in the cut. And then gave me a tetnis (SP?) shot. Then the doctor - who is obviously right out of school,but sweet enough, says "that's really going to hurt later". And it's my right thumb & i'm right handed.
Then I had to come home & clean up my kitchen, because seriously, if anyone had come into my house & didn't know where I was, my hubby would SO be in jail for killing me. I had blood everywhere.

Okay, it's not funny but bwahahaha! it's kind of funny. I can sympathize. I'm STILL finding blood in my kitchen from when I sliced my finger over xmas. No stitches though, just what looked like a murder scene.
Don't let that turn you off from sweet potato chips though! I make really good sweet potato chips by cutting the sweet potatoes into 1/4" rounds and then baking them in the oven w/ salt and pepper until they're cooked. Then I make a dipping sauce using black beans, light sour cream, salt and pepper. You just put all that in a food processor and blend it up and it's SO good. Excellent with a shrimp taco too and not bad for you either.

Yeah, I guess I was avoiding the specifics. I think I usually put them on a baking sheet in a 350 degree oven for about 30 minutes or so. They're not crispy, but I suppose you could turn the broiler on during the last few minutes and get them golden brown as long as you keep an eye on them. (Yes, I'm looking at you blubirde, Ms. Leave-The-Gas-On-The-Stove-On-For-A-Few-Days-Until-I-Almost-Carbon-Monoxide-Poison-Myself! ) I'm also thinking you could put the slices on a cooling rack and put the cooling rack on a baking sheet so the air can get to both sides of the potatoes and then they might end up crispier.
I'm not sure why sweet potatoes are so hard to chop. They're just hard potatoes and they take FOREVER too cook if you cook them whole. Like well over an hour. I don't think it has anything to do with how fresh they are...in fact, I think they keep pretty well.
I put mine in on for 20 minutes on one side & 10 minutes on the other. Yes, after I sliced the hell out of my finger i STILL made them. I was starving! LOL They came out ok- i had sprinkled them with cinammon & splenda. They are super easy to cut up with this gadget I have, but I wasn't using the protect-your-fingers part, thus the kitchen oppsie. And it's kinda pricey. But maybe your cheese grater has a slicing part on it? same principle.

but this is funny. When i called my husband about it, he told me to put duct tape on it. Apparently it has some kind of silicon in it that really does work if you are iffy about stitches. So I went to Home Depot before the doctor. Turns out it's good I got stitches because of where the cut is on my thumb, but that's some at home remedy triva for ya!

We have a Thanksgiving sweet potatoe recipe that's been in my family for many years anf my first Thanksgiving in my own place, I decided to make them so I could have the leftovers. Well, you have to microwave them to soften them up so you can slice them and then saute them with butter and brown sugar, but before you microwave them you have to stab them with a knife a bunch of times so they don't explode in there ..... so there I was, happily stabbing away when I hit a particularly hard part of one potatoe. The knife went in just fine, and as I pulled my hand back to remove the knife ... handle slipped right out of my hand. Knife stuck in sweet potato. I naively thought that the sweet potato is no match for me, and go to town trying to wrench the bugger out of there, when CRACK ..... the handle and HALF OF THE KNIFE BLADE comes off in my hand . The sweet potato won that fight ....

Hey! I haven't left the gas on one time since that... one time. However, I have cut myself 3 times in the kitchen since then. Including last night... ouch. I think I was channeling Laken1.
