I'm sick of store bought, and sure I can make a simple oil/vinegar dressing. But, I'd love to know what combinations you gals are using. I want to make a small jar's worth and store it in the fridge for a week, and then try another the following week.
YOu can do olive oil/salt/pepper/lemon juice/dijon mustard ( I prefer the whole grain kind, so that you see grains later in dressing), red paprika, grill spice.
1 special we do at home, that might sound crazy, but it's delicious: Mayo, sugar & minced garlic...For a cup of mayo about 2 teaspoons ( flat) of sugar, 2-3 cloves of garlic. Let it stand for a hour or so, the sugar grains will melt into mayo & the mixture will be smooth. I also add herbs to it according to what i have in the fridge at the moment: I believe dill/parcely/cilantro would work. Chop them finely.
P.S. I watch what I eat, so my mayo is very light/fate free...you know there are products with 15 cal per spoon or something...

This is one I make in the Magic Bullet - a coffee grinder works too. This is really only one serving so multiply.
1/4 cup raw pumpkin seeds - grind until fine Add to that 2 tablespoons olive oil Juice of about half a lemon (2-3 tablespoons?) 1-2 garlic cloves Salt/pepper to taste
Chinese "chicken" salad
Juice of one orange (about a half a cup) A few drops of toasted sesame oil (half a teaspoon?) 1 tablespoon other light oil, not olive (regular sesame or canola work) 1 teaspoon soy sauce 1 teaspoon agave syrup, brown rice syrup, or honey
Adjust to your taste and you could also add some apple cider vinegar if the orange is on the sweet side. Sesame seeds are good tossed in this.
Or "Bacon" ranch
Half a cup of Vegenaise A few drops of liquid smoke flavoring Teaspoon or so of apple cider vinegar A few sprinklings of dried green herbs like chives and dill
My paternal grandmother made a wonderful oil and vinegar dressing. She was first generation Italian-American, and her cooking was fab--as you can imagine. My mom tried to learn it from her, and she was quite successful too (thank goodness).
I don't have any guidelines for ratios / amounts of ingredients. It is made just to taste. Super simple too -
Corn or Canola oil
Red wine vinegar
Salt
Pepper
Garlic Powder
It tastes especially good on a salad containing a blend of
- iceberg and green leaf lettuce,
- diced green pepper
- thinly-sliced white or yellow onion,
- sliced tomatoes,
- black olives (halved),
- small cubes of provolone cheese,
- deli ham (like Boar's Head Branded Deluxe Ham),
- sandwich pepperoni, and
- hard salami
My mom just gets medium thick slices of the meats from the deli and cuts them into rectangles that are about 1 inch by 3/4-inch in size. Not the most healthful salad in the world, but it tastes great! We have it at Christmas time.
My favorite is: 50/50 olive oil and white wine vinegar (or rice wine or white balsamic) minced shallot minced garlic clove spoonful dijon spoonful honey (cuts acidity and nice balance w/o being too sweet) salt and pepper to taste optional: some fresh tarragon
