Please give me some food ideas. I've always counted my calories and continued to do so, but I'd like to drop a few pounds for an event coming up and I know that by cutting out some carbs, I could easily do that. But I need some food ideas!!
I'm not doing low carb now but I did a while back and these were a few o fmy favorites.
For desert
1 cup ricotta cheese 1 tsp vanilla extract 1 tsp cinnamon 2 pkts Splenda Blend (or stir) until smooth and put in fridge to chill
Italian Chicken
2 chicken breasts 1/4 tsp. salt 1 tbsp. Smart Balance spread 2 med. zucchini 3 lg. pitted ripe olives 2 tbsp. tomato sauce 1/2 tsp. oregano leaves Assorted peppers (red, green, yellow bell) Sprinkle chicken pieces with salt. Cut zucchini into 1/4" slices. Layer zucchini and peppers on 18"x12" piece of double thickness heavy-duty aluminum foil. Top with chicken, olives, tomato sauce and oregano; dot with butter. Wrap securely in foil. Place on grill 5" from medium coals. Cook 25 to 30 minutes on each side or until chicken and vegetables are tender.
Stuffed Chicken breasts
4 skinless, boneless chicken breast halves salt and pepper to taste 1 (15 ounce) container part-skim ricotta cheese 1 (10 ounce) package chopped frozen spinach, drained 1 clove garlic, minced 2 eggs, beaten 1 (8 ounce) package shredded low-fat mozzarella cheese, divided 1 (16 ounce) jar sugar-free spaghetti sauce Directions 1 Preheat oven to 350 degrees F (175 degrees C). 2 Season chicken breasts with salt and pepper to taste. Slit open on the side for stuffing; set aside. 3 In a medium bowl, combine the ricotta, spinach, garlic, eggs and 3/4 of the cheese. Mix well and stuff each breast with 1/4 of the mixture; secure with toothpicks and place stuffed breasts in a lightly greased 9x13 inch baking dish. Pour sauce over all and sprinkle with remaining cheese. 4 Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes, or until chicken is cooked through and juices run clear
Meat Crust Pizza
Brown about 2 pound of extra lean ground beef. Preheat oven to 350 Put beef in a large bowl & mix well with 2 cups of Lf mozzarella cheese. Spread mixture out like a pizza crust on a cookie sheet or a baking stone. Put 1 cup pizza sauce on the mixture. Ragu is ok.(pizza sauce, no sugar in it) Top with 1-2 cups of Lf shredded mozzarella. Top with canadian bacon and or low fat pepperoni slices I usually just use the canadian bacon (optional onions, peppers, anything legal that you like on pizza's.) Cook 15 min. or so (when top cheese starts to brown it is done.) Put foil on rack below to catch any drippings.
I also liked to make taco salad with ground turkey, cheese, black olives, green olives tomatoes etc and just mix it all up. For taco cihps I used, this is going to sound weird but you have to at least give it a try. But those Cheese slices that come individually wrapped put one on a piece of wax paper sprayed with Pam and put it in the microwave for like a min and a half. It burns it and turns it into a "crisp" it tastes like a cheese chip or cheese cracker but they are really good for scooping taco salad.

I've always wanted to try a low-carb diet (and I cut out most white carbs, as I call them) but I'm not a big meat eater. Any vegetarians out there who do the low-carb thing? If so, any suggestions?
Hope I'm not hijacking your thread Collette! (I have no menu items to suggest but I might make that first Italian chicken for the boy when he comes home from vaca. He likes meat.)
i watch rachel ray's 30 minute meals when i can't stand the news anymore....
i remember watching this one that was low carb and she made cauiflower mashed "potatoes". it kinda makes sense, and while i don't like raw cauiflower, i can see the recipe being good, i still want to try it. i think you cook it just like you would mashed potatoes.
try going to the food network and clicking on her show to see if there are any other low carb recipes that look good. also, borders bargain section always has cookbooks for like $5.00 and i know i've seen low carb cookbooks before.

I did low carb forever ago and its so hard to remember what I ate! The few things I can think of are omlettes (really filling if you load them up with veggies- YUM), spagetti squash, different kinds of salads (taco, buffalo chicken).

Ohhh, my mom's a chef and she makes these! They are soooooooo yummy. If this is something you're interested in rar, I'll ask her for the recipe.

I'd love that recipe if you can get it! I love mashed potatoes but never eat them - for obvious reasons.
I'm vegetarian, and I guess I'm also doing pretty low-carb. So I eat a LOT of eggwhites and tofu.... also yogurt and a little oatmeal. What I've noticed is that most things I think of as mostly protein in fact have a fair number of carbs, so I don't even worry about getting enough of them. Also, be careful about simple vs complex carbs - for example, even though it's so sour-tasting, plain yogurt (nonfat) is about half sugar carbs (calorically). My parents always stir-fry tofu with garlic, tamari and onions. And there are a couple of cookbooks, 'tofu cookery' and 'tempeh cookery' (or similar creative titles) that have some good recipes - in one of them there's a tofu 'meatloaf' that's really good.
1/2 pound cauliflower florets, chopped 1 garlic clove, smashed 1/3 cup chicken broth 1/2 tsp. salt 2 Tbsp. Heavy Cream 1 tsp. unsalted butter
Simmer cauliflower, garlic, broth and salt in small saucepan, covered, about 10 minutes, until cauliflower is very tender. Drain, reserving any broth. Carefully puree in food processor until smooth, adding butter and heavy cream. Add reserved broth if necessary. Add salt and pepper to taste.
She actually made this at work today! Oh how I miss her cooking.
