This is a lofty request. But, if anyone is up for the challenge, give it your best shot. My mom suggested that she, my sister (30), my husband, and I meet for a vacation instead of having her visit us in Charlotte.
We could go almost anywhere in the US, Canada, territories, but I'll give you some background. We are in the very initial inspirational stage. Any and all ideas can be gathered and put on the table.
Here are some rules/suggestions. I just want to see what others come up with.
1. No cruise ships 2. No Disney-anything 3. No "adventure/super athletic" destinations/camping/roughing it

Female, age 34, career counselor, creative, laid-back, casual, passive, and very unconventional. Grew up in small town, lived in moderately-sized city for 8 years. Has traveled some within U.S., Canada, and USVI. Appreciates culture, art, music, architecture, shopping, beach, pools, sun, quiet, variety, and dining out/good food/beverages. Willing to try new things, seeks authentic experiences, some physical activity (very light relative to most others (just walking, swimming, biking, quiet canoeing)). Introvert
Male, age 34, furniture designer and builder, creative, professional. Moderately well-traveled, enjoys new experiences, food/dining out, relaxation, reading, walking, music, art, design, culture, new people, intimate experiences. Loves beautiful views. Likes mixes of activity and privacy, relaxation, rejuvination. Happy with sun, beach, pools, very atuned to aesthetics and appreciates attention to detail when it comes to physical surroundings. Somewhat extroverted, very visual.
We are all located in the Eastern time zone of the US.

I suggest either Chicago (cause I live here and love it) or San Fransisco (which I love to visit.) Both have great cultural sites (museums, music scenes, theatre, etc.) , amazing restaurants, and gorgeous scenery.
