Help! Banana recipes

So I was at the farmers market this weekend and they had bags of ripe bananas for $3. I counted when I got home and I got 20 bananas!

Help... I need banana recipes! I gave some to my mom and threw most of them into freezer bags (peeled) to use in banana bread but there is only so much banana bread two people can eat.

I love making banana pudding with them. I do a weight watchers version that is really good. You use a 9x9 pyrex dish (the square one) and line it with low fat cinnamon graham crackers. Then you mix up some fat free vanilla pudding and then mix with 1/2 container of fat free cool whip. Take half of that mixture and put on top of graham crackers. layer with banana slices. Repeat crackers, pudding, bananas. Top with remaining cool whip and refrigerate for a couple of hours.

I'll double check the measurements but I'm pretty sure that's what it is.

You can used mashed ripe bananas in place of milk or water in most recipes for baked goods. If something calls for a cup of milk, put a mashed banana in the measuring cup and fill to the line with milk.

Two smashed bananas are good in the regular ol' chocolate chip cookie recipe.

Banana nut muffins are probably more exciting than banana bread.

We drink a lot of smoothies, so frozen bananas never go to waste. And don't forget daiquiris! (Rum, lime juice, triple sec, blend.)

My FM never has bananas, I'm so jealous!

 Its funny you said that because Ness loooooves bananas. If you peel one near her she gets so excited that her tail waggs so fast she can't even sit still.

Bud our iguana loves them too. For $3 they were a great buy. I almost think I should have gotten 2 bags. Would buying 40 bananas in one go make me look like a total wing nut?

this recipe sounds really good, aurora.  about how many bananas do you use?

i was also going to suggest using them in smoothies.  if they're frozen, you can just throw them in the blender and you don't need any ice.  you can also add them to your cereal or waffle/pancake, grill/saute them and top with cinnamon and sugar free maple syrup, or smash them and add them to your oatmeal.  also, you can slice them up and top with lowfat choc syrup and fat free cool whip for a yummy dessert.

In addition to throwing pieces of banana in cereal, I also throw slices in my yogurt in the morning (Brown Cow Vanilla with Cream Top - !!!!)

I have tried making banana desserts, but I rarely enjoy them.  You might though.
I tried this Banana Chocolate Strudel recipe recently (I didn't wrap the dessert.  I just set the toppings on top of the puff pastry (so fun to watch in the oven!)).

Frozen bananas dipped in chocolate and sprinkled with crushed nuts!

Hi!

I mix mashed banana into pancakes I do for my toddler.

Also, once did a festive brakfast, so I found a very easy french toast recipy: french  toast stuffed with bananas - you slice the bread/briosh/hallah thicker ( about 2") then usual, cut it ALMOST to the end, so that it looks like a pocket, insert sliced banana pieces, then dip into that milk/cream/egg wash & toast. Sprinkle with cinnamon - came out DELICIOUS!

Let me dig up the recipe tonight.  I don't think it matters how many you use and I can't remember how many I normally do.  2 or 3 maybe.  It comes out to something like 3 weight watcher points per serving.
