what should i do with leftover fresh mozzarella?

i have some leftover mozzarella (the fresh, white kind that comes in a ball) that will go bad if i don't use it soon.  i used it before to make pizza but we don't have any more dough.  the challenge is that i don't have time to go to the grocery store today so i need to make something out of the ingredients in my fridge.  i have:

arugula
walnuts (small amt)
evoo, vinegar, spices, etc. (so could make a salad but it wouldn't have many veggies)
cilantro
carrots
bell pepper strips (frozen)
fresh mushrooms
tortillas
onions
polenta
pepperoni (turkey and regular)
pasta and sauce (maybe i'll just add it to this)

hmm that's about it.  any ideas?  i need to go to the grocery store!

You could make a version of a margherita pizza w/ the tortillas, arugula, pasta sauce, and leftover mozarella.  Drizzle some olive oil over it?

or fry the polenta, saute the mushrooms, pepper and onions in the evoo. Layer the veggies over the polenta, place a slice of mozz over that, and put it under the broiler. That way you're using the mushrooms too, which in my experience don't have a long shelf life either. HTH

Um, depending on how much was left, I would just eat it. I probably wouldn't even pretend not to be a disgusting pig by dressing it up with basil or olive oil or bread, I would just shove it in my face.

The above ideas would be great too, if you didn't want to go the route of disgusting pig.

thanks, girls!  hmm, i think i could do starstuff's idea easily adn that *would* get rid of the mushrooms too.  relrel - your post was hilarious.  btw i already ate a slice and my 3 yr old daughter was begging for some too!

I'd probably do a baked pasta dish - saute a bunch of the veggies in olive oil, mix with cooked penne or spirals or fafalle, grate the cheese on top and bake it for 20 minutes or so in a casserole dish or cake pan. Then lightly broil the top until it looks appetizing.

I'd add a bit of the salad greens on the side - at least the arugula w/ walnuts and a light vinaigrette.

I'd do an arugula salad: add mushrooms, cilantro, carrots, onions, de-frost bell pepper, toast walnuts. VInegar/olive oil/salt/pepper fopr dressing.  ( you can sautee mushrooms with belle peppers & toss them into a salad sauteed). Top the salad with mozzarella pieces.
I'd serve it with polenta & pepperoni ( your chocice which one:)

yum!  i already made pasta and just added the cheese but this sounds amazing.  thanks!

Oh - it helps to overcook the pasta slightly for baked dishes in case they dry out a bit in the oven.
