Any help on some polenta recipes? I have the tube variety and just have no idea what to do with it. The only thing I have ever done to polenta is to cook/fry in lots of butter and eat with maple syrup. The BF is on some strange grains/beans Mediterranean diet thing and wants to add more polenta to our meals. I have no effin idea what to do though and every recipe that I've looked up seems to deal with a different type than what I have. Most call for creamy polenta or just straight corn-meal.

Any  help is really appreciated!

I've seen it served in restaurants slightly fried (I guess) and with marinara sauce or bruschetta on top. You could try that.

I usually just cut it up and add marinera sauce and parm cheese.

Actually, I actively dislike red sauces of any kind. That's what makes this sorta hard!

i just slice it up and grill it with olive oil and chopped fresh cilantro (most often), basil, or rosemary, depending on what i'm serving it with.  it's a good, quick, & easy side.

Oh that makes it really tough! I like Alb's idea. It sounds yummy and Mediterranean with the olive oil and herbs.

I hate the tube stuff. It's a mess to fry, but I bet you could bake it on an oiled cookie sheet and serve as a side.

I love it sauteed quickly then topped with prosciutto, mushrooms, and mozzarella... stick it in the oven to melt the mozzarella. i made poletna "chips" last night. If you check my blog, there are a few recipes on there for the tube kind. The first one i just mentioned is the best though.

With the tube kind I usually fry slices of the polenta and then top it with sauteed spinach or mushrooms, or both.

Here are some ideas -
Wild Mushroom Ragout on Crispy Polenta with Comte

Another Wild Mushroom Ragout recipe - this one calls for tomato paste but you can probably skip it if you really dislike tomato, although I hate red-based mushroom sauces and didn't think this was bad

I agree to the grilling method, that's how we do it, it was the go to appetizer for several summers.
