morning girls,


breakfast: homemade wheat-free muesli (puffed rice, rolled oats, almonds & sesame seeds)


snack: orange


lunch: wild rice salad (includes avocado, tomato, sesame seeds, walnuts, bean sprouts & should have red kidney beans, but i burnt them )


snack: apple


dinner: monkfish w/ a bunch of veggies & such


workout: likely none due to hurt shoulder from yoga video last night

Breakfast: banana-walnut oatmeal with fresh banana chopped up

Snack: string cheese

lunch: ham and cheese sand on white wheat with lettuce and cucumber, peas, golden apple

Dinner: Not sure yet

Exercise: Walk for at least 40 min tonight Might start back up pilates dvd.

On a good note I lost 3 pounds last week (I think water weight due to TOM but I'll take it)

crystal, your wild rice salad sounds yummy! How do you make it? Do you just chop everything up and mix it together?

it was great, i just had it for lunch.  here's the recipe:


1. Wild rice salad

  • 50g wild rice

  • 1 tbsp sesame seeds

  • 50g red kidney beans (cooked or tinned)

  • 50g cubed ripe avocado

  • 50g bean sprouts

  • 25g chopped walnuts


    Dressing



  • 5 raspberries

  • 1 tsp raspberry vinegar

  • 1 tsp olive oil

  • ½ tsp soy sauce







     

    Place all the ingredients into a bowl, making sure you cut the bean sprouts into halves, and chop the walnuts into small pieces.


    Then place all the dressing ingredients into a blender and blast for a few seconds. This dressing is great to make in a larger quantity and then store in an air-tight container in the fridge for a week or so.


    Once you have made your dressing, pour it over the salad and then toss together so that the salad is properly coated.

    Breakfast: Shredded wheat w/banana, pineapple, coffee


    Snack: Apple, Chai Tea (w/1% milk and Splenda)


    Lunch: Vegetable soup, yogurt, rye crackers


    Dinner: Chicken enchiladas made w/low fat cream cheese and fat free sour cream, green beans


    Hopefully will get back to my jump roping tonight.
