I love jalapenos but rarely cook with them because my skin absorbs the oil so well that I can not wash it off unless I shower, so I usually end up with the oil in my eye before the day is out.
I read about and tried this handy tip, and it works wonders:
Before slicing open a jalapeno, coat your hand in cooking oil. The oil from the pepper will sit on top of the skin with the olive oil, and won't be absorbed, then gets washed down the sink with soap and water, before you have to flush your eye. Just make sure not to put oil on the hand that will be holding the knife.
It worked, I even touched my left hand to my lips, and they didn't burn. I didn't try rubbing my eye, just in case, but I have used this trick about 4 times now, and it hasn't failed me.
