I always love to be inspired by what you guys are making, so here's a new menu thread!

In the past week, I've made:
-Lentil Salad with Balsamic Vinaigrette (a light dinner with strawberries and cream for dessert!)
-Honey and Soy Glazed Salmon (a staple) with Rice and Sweet Corn
-Vegetable and Chickpea Curry -- yummy one-dish meal in the crock pot that I made for the first time

Not sure what, if anything, I'll cook this weekend...

Mexican street vendor style corn

seared scallops

cod in a weird by yummy sauce

crab & swiss melts

open faced bagel sandwiches

Yum.  Those sound delicious!  I discovered a new food combination - it doesn't count as cooking - but indian take out (namely channa masala and garlic naan) go fantastically well with rose champagne!  Who would have thought?

I'm a terrible cook without the aid of a bottle of sauce, but I did make sun-dried tomato and mushroom pizzas using rosemary ciabatta bread yesterday. I served it with homeade sweet potato fries and a side salad w/red wine and olive oil vinagrette.

Mmm, homemade pizzas! I really want to try making sweet potato fries, I've never done them, but I love sweet potatoes, so it seems like a great idea.

I just picked up a big batch of groceries, including stuff to make the following two meals:
-Quick Chicken and Chorizo Paella
-Chicken and Cashew Stir Fry

Trader Joe's has a package of sweet potatoes already pre-cut into perfectly sized fries. I drizzle some olive oil and salt (kosher/sea salt would be great, but I never keep that kind of stuff in the pantry so I use Morton's). I put it in the oven preheated to at 400 for about 20 minutes. Then I turn the fries over and cook for another 10.

I'm not the best cook, but this is foolproof. I find regular fries to be a bit bland if they're not fried, but sweet potato fries are great.

So I finally have a few dishes planned.

-Beef and Broccoli (asian style)

-Homemade veggie pizza (store bought crust, alfredo sauce, artichoke hearts, spinach, tomatoes, green peppers, red onions, olives, and of course mozzarella cheese).

-Bleu cheese burgers w/pear tomato and cucumber salad
-WW Linguini, peas, and prosciutto in alfredo sauce
-Spaghetti squash w/tomato sauce and goat cheese crostini
-Soy tacos

10 garlic cloves, minced

6 fresh Thai chiles, thinly sliced crosswise (I used two jalapenos, seeded and sliced)

1/4 c canola oil

2 lb boneless, skinless chicken breasts, cut into 1" pieces

1 TBS + plus 1 tsp Asian fish sauce

2 tsp soy sauce

4.5 tsp sugar

1 tsp black pepper

3 c loosely packed fresh basil leaves

Brown rice, for serving

Mash together garlic and chiles using a mortar and pestle or the flat side of a large knife. Heat oil in a wok or large skillet over medium-high heat. Add garlic mixture. Cook, stirring constantly, until garlic is just golden, about 20 seconds.

Add chicken; cook, stirring often, until chicken is cooked through, about 4 minutes. Stir in fish sauce, soy sauce, sugar, and pepper. Add basil; cook, stirring constantly, 1 minute. Season with more pepper, if desired. Serve over rice. Garnish with basil.
