Since it's the Fourth, most of us will be making or eating potato salad. And, I don't think I've ever had the same recipe twice. Everyone I know makes it a little different.
I've always used mayo, dijon mustard, hardboiled eggs, onions, paprika, salt and pepper...I think that's all I use, I haven't made it since last year and I usually just eyeball everything.
This is making me want to have potato salad this weekend!
I love the way my mom makes it! She puts potatoes, celery, pickles, hard boiled eggs, salt, paprika (a little on the top), mayo, a little bit of mustard, green pepper. Pretty much the same as JETTIE except mymom puts pickles in it...which is my favorite part!
Someday, I will ask for the potato salad recipe from 300 East in Charlotte. It is the best I have ever tasted. On the dry side with lots of garlic, 300 East's potato salad is consistently good and hearty-yet refreshing. I've been meaning to get the recipe. Maybe they'd give it to you over the phone.
