I'm bringing my lunch to work now - and have gotten stuck in a peanut butter sandwich on wheat bread with an apple rut! I've literally had this lunch for a week straight!
I'm trying to keep it organic and relatively healthy - but not too concerned about fat!
Ooooh, my brother and I have been taking yummy wraps with us to school. They are so good and way better than those boring sandwiches we used to eat! Here is what I use.
-Mission's Sundried Tomato Basil wraps -Deli Turkey (I've been using Hormel's Natural Choice -no preservatives!) -Romaine lettuce -Cesar dressing -Shredded parmesan cheese -Sliced roma tomatoes -Chopped red onion
I try to just cook more for dinner the night before so I have enough to take the next day for lunch. Lunch is more exciting when it's not always peanut butter :)
Do you like salads? I like to chop up cucumbers and tomatoes at the beginning of the week and then keep bagged salad and dressing at work and mix it all up when I get there.
Or try sandwiches inspired by fun sandwiches at restaurants you like. Instead of just turkey on wheat, add carrot strips, spinach, honey Dijon mustard, some fun cheese... Sometimes I like to get a French roll, mozzarella, and thinly sliced prosciutto for a nice change of pace. Or a mini baguette, mozzarella, tomato and basil.
I also like Lean Cuisines, but I get so hungry that I have to bring sides, so I keep light string cheese, Trader Joe's trail mixes, and fresh fruit at my desk. Oh, and lately I love Teddy Grahams for satisfying my sweet tooth, yet still being somewhat healthy (well, healthier than Oreos).
I take my lunch to work everyday. I made a great antipasta salad the other day that consisted of the following:
marinated artichoke hearts Turkey Pepperorni (less fat) Low cal mozzarella cheese cubed Red roasted peppers marinated cannelini beans (marinate over night with herbs, salt, pepper, olive oil) green beans grape tomaotes red onion beets Fresh basil and oregano
I made a dressing of olive oil, lemon juice, dijon mustard, balsamic vinegar, garlic, salt and pepper.
It was so tasty and extremely filling because of the cannellini beans.
Great for the summer and you can customize the salad to what you like.
