I thought about posting this to the veg thread but rather than see it buried, I thought I'd start fresh. If you have better ones, please post!
This is a recipe I just got - not available on any web site - and it should be a great addition to the repetoire for those of you trying to eat healthier. It's bar-none the best scrambled egg replacement I've come across in almost a decade of seeking, and it doesn't ask you for anything that isn't in your pantry already.
1 package (16 oz) firm/regular tofu, rinsed, and as dry as you can get it - I dried it on paper towels and then let it sit in a colander to drain for a while to boot
2 teaspoons onion powder 1 teaspoon garlic powder 1/2 teaspoon turmeric - don't omit this as it gives the tofu a good yellow color as well as boosts the flavor 1/2 teaspoon each salt and pepper 1 teaspoon parsely flakes, crumbled a bit between your fingers
Combine all the seasonings well in a small bowl, then crumble the tofu into a larger bowl. Slowly blend the seasoning mix with the tofu and let it sit together for a bit while you dice whatever ingredients you feel like adding - mushrooms, tomato, bell pepper, and so on.
Spray a nonstick skillet with oil and start sauteeing the veggies. Add the tofu mixture and keep moving it around until it feels like it's hot enough.
These instructions suggest mixing up large batches of the seasoning blend and when you need it, use about five teaspoons of this stuff per package of tofu. I find this recipe simple enough to manage without that...
