I am always looking for fun new recipes to try, especially when I have people over. I thought it would be fun to start a recipe exchange with your favorite tried and true recipes. I'm not the best cook, so this is probably ridiculously simple, but one of my favorite recipes is:
Zucchini Pie
1 cup chopped zucchini 1 cup chopped tomato 1/2 cup chopped onion 1/3 cup grated Parmesan cheese 2/3 cup Bisquick Heart SmartŪ mix 3/4 cup fat-free (skim) milk 2 eggs or 1/2 cup fat-free cholesterol-free egg product 1/2 teaspoon salt 1/4 teaspoon pepper 1. Heat oven to 400°F. Lightly grease bottom and side of pie plate, 9x1 1/4 inches. 2. Sprinkle zucchini, tomato, onion and cheese evenly in pie plate. 3. Stir together remaining ingredients with fork until blended. Pour evenly into pie plate. 4. Bake about 35 minutes or until knife inserted in center comes out clean. Cool at least 10 minutes. High Altitude (3500-6500 ft) No changes.
I'll play. BF loves this recipes. It's always a hit when I take it over to parties, etc.
Enchilada Casserole:
1 can refried beans (i like to use the zesty salsa flavor) 1 package of ground beef or turkey 1 small can of diced chiles or jalapenos 1 or 2 small cans of sliced oilves 1 package of those small round white or yellow corn tortillas (i think they are for tacos?) cliantro 1 large can of red enchilada sauce couple cloves of garlic 1 large onion salt and pepper to taste
1. dice and saute onion in olive oil until soft, also saute minced garlic 2. add ground meat and brown 3. once meat is browned, add the can of refried beans, some enchilada sauce, and diced chiles/jalapenos 4. add can of olives 5. layer tortillas dipped in remaining enchilada sauce on bottom of the pan 6. spread bean/meat mixture 7. layer cheese 8. repeat 9. for the very last layer, garnish with cilantro, some olives, cheese. 10. bake at 375 for 25 mins!
