Im making chicken and steak fajitas tomorrow for Cinco de Mayo. Ive checked All Recipes and a couple other websites and havent found anything I like. If you have a recipes that you love...or a website to recommend, please let me know! Thanks!!!
Marinate your chicken and steak tonight, and wait until tomorrow to marinate the veggies (maybe 30 - 60 minutes).
I promise you this recipe is BETTER than restaraunts. It is deceptively simple looking, you'll just have to trust me until you try it. Now, mind you this is from Allrecipes.com, but it really, truly is spectacular, just try it and you'll see. I could really rave on and on about this recipe. We have been using it for over a year now and when guests have it they always want the recipe. I don't eat meat, it tastes wonderful on shrimp, and I'm dying to try it on tofu. ETA: I have a grill pan (holes in the bottom) that I use to cook the veggies on the grill, but you could always use skewers or one of those grill baskets.
INGREDIENTS
1/2 cup vegetable oil
1/3 cup soy sauce
1/4 cup red wine vinegar
2 tablespoons fresh lemon juice
1 1/2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
2 cloves garlic, minced
1/2 teaspoon ground black pepper
1 1/2 pounds flank steak
DIRECTIONS
In a medium bowl, mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. Place meat in a shallow glass dish. Pour marinade over the steak, turning meat to coat thoroughly. Cover, and refrigerate for 6 hours.
Preheat grill for medium-high heat.
Oil the grill grate. Place steaks on the grill, and discard the marinade. Grill meat for 5 minutes per side, or to desired doneness.
1 clove garlic 1 1/2 tsp. seasoned salt 1 1/2 tsp. ground cumin 1/2 tsp. chili powder 1/2 tsp. crushed red pepper
Season your meat and veggies in the above seasoning and let set for 2+ hours or more. The longer the better Saute in 2 Tbsp each of vegetable oil and lemon juice. Spoon into warm tortillas.
