I just made one for the first time in probably seven or eight years (at least).  And it was soooooooooooo good.  How did I forget about these for so long?!

Just felt like sharing! wink  Any other grilled cheese lovers out there?

Yummy! I love grilled cheese.

What kind did you make? I'm a fan of mozzerella w/ pesto, but I also like a nice cheddar and pepper jack combo.

That's a brilliant combo.  When I'm feeling more sinful I like my grilled cheese w/ tater tots and ranch dressing for dipping.ashamed

I'm so having grilled cheese for dinner!

Hmm, I never thought of doing grilled cheese other than white bread and Kraft singles. Maybe I should step it up a notch! Sounds good!

DH and I did gourmet grilled cheese sandwiches for New Years with champagne and it was great. We had brie, gouda, and mozzerella and we mixed and matched other toppings and spreads like pesto, bruscetta topping, artichoke hearts, olives, prosciutto and caramelized onions. It was so fabulous.

I think my favorite combo was brie, prosciutto, pesto, and onions. Sooooooooooooo good.

Mmmm, glad to know that I'm not alone! I just did a very basic grilled cheese: sliced sharp white cheddar on wheat bread in the frying pan with a little margarine, but now I have loads of great versions to try next!

Gruyere is also great. But even a BAD grilled cheese is still a good grilled cheese, knaameen?

I always buttered both insides and outsides of the bread. It takes longer but I found it worthwhile. Something chemical occurs when you butter the insides - it's like the cheese sticks better or something.

My later technique was to turn the oven on low when I started - about 170 - so the finished sandwiches stayed warm on a cookie sheet while I cooked the rest. Alas those days are over now that hub is a vegan!!

i just had one this week too. i had absolutely no food in the house and it was all i could scrape together for lunch. it was SO good though.

i like mine with grilled onions and tomato slices.

Seriously, it was so great.  Totally a fantastic way to ring in the new year.  I also should mention we had cider beer as well, which went really nicely with the grilled cheese made out of gouda.  (Not like I had multiple grilled cheeses in one night....I would never do such a thing!  wink)
