dip for pita bread! Mmmm!
Permalink Closed

We get lunch catered at my job every day (I know, it's so amazingly wonderful!) and yesterday we had this great side, and I found a recipe just now that I think is it (I could taste sour cream when I ate it, and someone said that it's called a yogurt dip, and I know it had cucumbers... so I'm 99% sure this is the right recipe!) and I just wanted to pass it on as a great snack. I couldn't eat enough of this yesterday, I high recommend it

1/4 cup plain yogurt
1/4 cup sour cream
1/2 cup cucumber, peeled and diced
4 pita bread rounds

You just mix the first three incredients together, cut up the pita bread, and dip! I know it's so simple, but it's so great I had to share :)

Yummy. I make yogurt cucumber dip all the time. It is so light and refreshing for summer. In my version, i use greek yogurt (a thousand times better), some garlic and cumin. Also, i use a hot house/english cucumber because it has more flavor, less water and almost seedless.

I peel and quarter the cucumber and try to remove the center where its mushy and has a few seeds. Then i stick the cucumber, yogurt, spices, a few mint leaves, a drop of olive oil and salt and pepper in a food processor and blend it.

Serve w/ pita bread or cut vegetables. It also makes a great hamburger topping.

I think that's a greek dip... I believe it's called tzatziki? or am I thinking of another one? If it is, tzatziki is sooooo good, and I think you can make it with all yogurt and no sour cream, and that cuts down on the fat content.

ETA: I just read Sunshinegirl's post over again, and it looks like she doesn't use sour cream either... so I guess I am just repeating what she said
