I make mushroom rice w/ brown rice a lot. I just use saute some chopped mushroom, minced garlic and chopped green onion in a tablespoon of butter for a few minutes, add 2 C. broth (chicken or veggie. I use low-sodium chicken), and 1 C rice. Boil and reduce heat to simmer, and cover for 45 minutes for brown rice, about 20-25 for white. Yum!
I make stuffed peppers using brown rice - I don't have a specific recipe to give you since I rarely follow them , but the stuffing I make is usually brown rice, tomato sauce, canned diced tomatoes, and soy sausage.

1 can of low sodium diced tomatoes (i like the jalepeno flavor)
1 onion diced (i cheat and buy frozen diced onions)
garlic (minced or fresh)
shredded cheese (i like a mix of monteray jack and cheddar, or any mexican blend)
Directions:
in a large pan saute onions and garlic. after onions are cooked, add corn, black beans, and tomatoes to warm. while that's cooking, cook instant brown rice. mix the rice pan with the other and put into a casserole dish. top with cheese. cook in oven for 20 minutes at 350. you can also add shrimp or sour cream to the recipe.

I like brown rice with a can of crushed tomatoes and a can of chick peas over top. You put the two cans worth in a pot and add a bunch of spiced and eat it over the brown rice.
