It's Getting Warmer-Salad Time!

so i get bored of salads pretty easily.  i'll do an italian version for a week, then a greek for a week, etc...  i'm running out of ideas.  what are your favorite salads or toppings?


recent ones:



  • lettuce, feta, mandarin oranges (canned), dried cranberries, raspberry vinegarette.

  • artichoke hearts, red onion, black olives, pimmentos (the red things in olives), low fat parm cheese, red wine vinegarette (it's soooo good, from a restaurant). 

  • turkey, ham, turkey pepperoni, mozzerella, chow mein noodles, red or green peppers, italian or poppy seed dressing.

  • immitation crab meat (i love this because it's low cal and has a ton of protein), brushetta, random veggies, ranch.

  • ceasar and bacon bits. 

  • tuna, honey dijon dressing, chow mein noodles.

Pasta House Salad Recipe #52612
This is supposed to be a copy-cat of Pasta House Salad, but I think of it more as my step-mothers signature salad. We have this at every family function. It tastes very unique, and is also easy to prepare. I have often made it up the night before, salad in one bowl, dressing in another container, and then just combined the two prior to serving.

head iceberg lettuce

1/2
head romaine lettuce

1
can artichoke hearts, drained

1
medium red onion, sliced thin

1
jar pimientos

2/3
cup olive oil

1/3
cup red wine vinegar

1/4
teaspoon black pepper

1
teaspoon salt

2/3
cup parmesan cheese



  1. Toss together the lettuce, artichoke hearts, onion, and pimento in a large salad bowl and set aside.

  2. Combine remaining ingredients ina container with a tight lid.
  3. Shake container vigorously until well-blended.
  4. Pour dressing onto salad and toss until well covered.
  5. Refrigerate for about 30 minutes prior to serving to marinate.
  6. Note: do not add dressing for more than 30 minutes prior to serving, because the acids in the dressing will break down the lettuce, causing it to be wilty.

another one i make is a modified version of this.  my bf doesn't complain when i make it because it's not a "salad". 


Taco Salad Recipe #11098  (from recipezaar.com)
I've made this salad for years and it's always requested that I make it for parties and get-togethers. Very popular with my family and friends.

bag prepared garden salad

1
bag nacho cheese flavor Doritos, crushed

1
lb ground beef

1
medium onion, chopped

1
bottle thousand island dressing

1
package taco seasoning


tomatoes, chopped


shredded cheddar cheese
*you can use baked doritos and i never put a whole bag, and i also use ground turkey instead, and low fat thousand island dressing.  i also sometimes use salsa if i don't have tomatoes on hand. 



  1. Brown the meat and onion together.

  2. Drain off fat.
  3. Add taco seasoning.
  4. Fill the empty taco seasoning pack with water and mix in.
  5. Let meat mixture cool.
  6. Mix with all other ingredients, adding Doritos last.

My favorite salad is from Trader Joe's.  It's one of those pre-made bagged versions and it's Trader Joe's brand.  It's got:  baby spinach, dried raspberries, gorgonzola cheese, candied walnuts and raspberry vingarette.  If I'm eating it as a meal, I just throw some chicken in it.  It's so good!

That sounds deeeelish, I'm going to have to look for that next time I'm at TJs.


I'm pretty stick to the same salads too much, my faves are:


*Spinach w/ dried cranberries, sunflower seeds, and raspberry vinaigrette
*Mixed greens, black beans, corn, cilantro, lime juice, and some lite citrus-y dressing
*Spinach, feta, kalamata olives, balsamic vinaigrette

My fave salad is a greek salad. It's 1-2 points per serving, depending on the amount of cheese you put in.


Spinach, red, orange, and yellow bell peppers, cucumbers, ff italian dressing, and reduced fat blue cheese crumbles. It's the perfect mix of sweet (peppers), flavorful (cheese), and tart (dressing). You can either mix the blue cheese in with the salad or just add it to your portion. I add about 2 tablespoons to my salad and that makes the whole thing 2 points. I'm craving it now!


Bleh - I'm a dork. I meant feta cheese, not blue cheese, although you can technically use either. I was laying in bed last night trying to fall asleep when it came to me that I said blue cheese. How weird is that?

i'll have to check out the salads you ladies posted.  my bf loves greek ones, and i like more fruity ones.  i have dressing down for fruity ones, but anyone have a good greek rec?  store bought or homemade?

I am a salad queen!  I love salads.


One we made last week:


Thinly sliced flank steak, goat cheese, toasted pine nuts, red bell pepper strips, thinly sliced red onion, and thinly sliced carrots over a bed of greens, then drizzled with EVOO and balsamic vinegar and salt and pepper.  So good.

YUMMY KILLA SUMMER SALAD:


You'll need ...


One pound of greens (I use spinach and romaine)


3 kiwis (peeled and sliced)


1 pint of fresh strawberries (sliced in quarters)


1 pint of fresh raspberries


1/4 cup of toasted slivered almonds (or your fave nuts!)


DRESSING:


2 tablespoons raspberry preserves


1/4 cup olive oil


2 tablespoons raspberry vinegar


TOSS AND ENJOY!!


So.freakin.good.

Try throwing some beans such as garbanzo or black beans in your salads. I like to marinate the beans the night before in lemon juice, olive oil, salt pepper and garlic.


Also, i love marinating canned baby corn cobs in banana pepper ring juice for a couple of days and then adding them to salads.


Crush and toast a handful of uncooked ramen noodles for salads.


Maybe some grilled shrimp to your salads

Karina- the first and last ones look especially good.  i'll be making that and your mango salsa that you posted last year! 


i made my Pasta House salad last night and ladies you really should try it, it's soooo good.  everyone always asks for the recipe, especially when i bring it to work.

Everything sounds so yummy!  thanks for the ideas.


I also love a super simple Greek salad - its great to bring on the side for work because nothing gets wilted:


sliced red onions, sliced tomatoes, sliced cucumbers and basil sprinkled with lemon, balsamic vinegar, and olive oil - add feta and peppers if wanted.


This is my favorite appetizer, Caprese salad:


tomatoes, sliced buffalo mozzarella and basil

My favorite salad is from Whole Foods, but now I make it myself at home. It's sooo easy!

- Dark lettuce (I like to add in spinach too)
- Goat cheese
- Dried cranberries
- Pecans
- Balsamic Vinegar

That's it! It takes like 5 minutes to throw together (or less) and it's so yummy.

Oriental chicken salad...


cold cooked chicken


carrots, cabbage, green onions- all shredded thinly, lettuce- whatever kind your prefer

another good one...


Balsamic Endive salad


Endive leaves, whole or cut into bite size peices as you prefer


candied walnuts- melt 1 tsp of butter and 1 tsp of brown sugar in a pan, toss with 1/2 cup of walnuts until walnuts are covered. Cool


Balsamic reduction- boil balsamic vinager in a small pot until reduced by half of its original volume. Watch carefully so it wiil not burn. Vinegar will be very strong and thick in texture.


Crumble over top of the endive the bleu cheese and walnuts. Drizzle with a small amount of balsamic reduction. Serve
