I have a ton of fresh green beans that are delish but I am sick of eating them plain (I usually steam them or sautee with garlic). Any other fun ideas of things to do with them?
I am very close to making soup, but I'm really not in the mood for that either...
Not the most super-healthy way necessarily, but I like to fry up a couple pieces of bacon (pork or turkey) until it's really crispy and then saute the beans in the leftover drippings. Then I crumble the bacon up and sprinkle it over the beans.

Hungarian-Style Potatoes & Green Beans
Makes 2 Servings
Ingredients
1 cup red potatoes, halved, sliced 1/4" thick 1 cup fresh green beans, cut into 2" pieces 1/2 cup onion, quartered and sliced 1 tsp sun-dried tomato, rehydrated and chopped 1 tsp fresh parsley, chopped 1 tsp olive oil 1 tsp butter-flavored granules 1/8 tsp paprika
Place the potatoes and green beans in a microwave-safe (2-quart) steamer basket with bowl underneath. Add a small amount of water. Cover and microwave on High for 3 minutes. Let stand for 2 minutes. Add the onion and continue to microwave on High for 1 minute more. Let stand for 1 minute. Discard water and empty vegetables into the bowl. Toss with the tomato, parsley, olive oil, butter-flavored granules, and paprika. Serve immediately.
