Just want to share!  I found this recipe online and it's delicious. Made it with some friends for a cozy winter dinner. We used a nice big crusty olive loaf instead of a baguette, so the pieces of bread were big and meal-sized. We each had two pieces of bruschetta (more like open-faced sandwiches) and a salad and wine and it was perfect, and you get veggies and protein and all that. 


P.S. A note about pronouncing bruschetta.  It's a pet peeve of mine when people say it "Broo-shetta."  It's actually "Broo-Sketta."  ("ch" is a hard sound in Italian - like "k").

Bruschetta with White Beans, Tomatoes and Olives Recipe


Ingredients:



  • 1-1/2 C canned white beans, rinsed and drained well
  • 3 med. tomatoes, seeded & chopped
  • 1/4 C pitted kalamata olives
  • 4 -6 tbsp. olive oil
  • 1/4 C chopped fresh basil
  • 1 tbsp. minced fresh garlic
  • 1 baguette sliced into 1/2" rounds* (Highly recommend using a big crusty peasant loaf instead)
  • 5 to 6 oz. soft fresh goat cheese
  • (I added salt and fresh ground pepper to taste and I highly recommend it)


Directions:


Combine beans, tomatoes, olives, 4 tbsp. olive oil, basil and garlic. Season w/ salt & pepper. Baguette slices can be basted lightly w/olive oil and broiled or toasted (no oil necessary) in a toaster until golden and crisp. Spread toasts w/goat cheese, then top with bean mixture. A great recipe for using up 1 or 2-day old baguette that's too stale to eat on its own.

I love love love all kinds of bruschetta. I will definitely try this. For some reason I've done white bean bruschetta and tomato bruschetta but never combined the two. I've been meaning to make red onion bruschetta lately because it seems more seasonal than tomato.

The pronounciation is one of my pet peeves too. I tried to convert my sister but she gave up because she said most of the people (including waitstaff) she's encountered pronounce it brooshetta so she felt stupid. Actually I think I've even caught my mother calling it brooshetta in restaurants and she studied Italian for years. Victims of peer pressure!

Ha! I am with you guys on the pronunciation- it's totally one of my pet peeves too. It drives me insane how many people insist on calling it "brushetta"!

Thanks for the correct pronunciation, I always heard it the wrong way on tv and it doesn't help that there's that pizza called freschetta, which is pronounced fresh-etta.

This was so good!  I didn't have everything I needed, but it still was so yummy. 


Instead of goat cheese I used buffalo mozzerella, some italian bread loaves I cut into thick slices, and had to omit the olives.  Next time I def want to try olives & a better bread.  Thanks for the recipe!

Oh. My. God. This recipe was so freakin' good. I made it last night (only I made it on small pieces of bread because I wanted it to go with the fish I was making - weird combo but I wanted to try both recipes, so I did).


Seriously, I wanted to eat only this all night long. I still want to eat it. I had some leftovers so I stored them up in individual containers so I can have one every day. (I hope they store well!) I'm definitely incorporating this into my regular recipe rotation. Hee. I did an alliteration.
