I think we did this last year too. Post your favorite cookie recipe and a photo if you have one (I'll post mine after I get some much needed baking done.)
Snowcap Molasses Crinkle Cookies
I love molasses cookies, but I'm the only one in the family so I don't get to make them too often. You don't have to add the royal icing on top. You can also sprinkle coarse sugar on just before baking.
Ingredients: 1 egg, beaten 1 cup granulated sugar 3/4 cup shortening 2 level teaspoons baking soda 1/2 teaspoon salt 4 Tablespoons dark molasses 1 teaspoon ginger 1 teaspoon ground cloves 2 cups flour
Directions: - Cream together shortening, sugar and egg until smooth.
- Mix in remaining ingredients
- Form into balls (slightly smaller than golf ball-sized.) Flatten with a shot glass dipped in sugar.
- Place balls on an ungreased cookie sheet (I use parchment paper for even browning and easy clean up), allowing room for cookies to spread.
- Bake at 350 degrees for 8 to 10 minutes. Avoid over-baking so that cookies remain chewy.
When cooled, spread a thin layer of royal icing on top of cookie (hence the "snow cap".
I'd love to say..."I'll be back with a recipe", but in all honesty I'll probably never get around to it. Love the idea though...and mmmhmm molasses...yum! Feel free to send some my way if you just so happen to over-bake and your kitchen can't handle the amount of cookies! :)
