Exciting! Love remodelings!
So, you don't need to match exactly wood finishes, in fact it never looks good when they're all the same - heavy look. However, different finishes do have to work together. Medium brown woods work well with espresso, both of the shades you circled look good. Red circling - provincial and walnut look totally different. Are they that different in your bathroom? Don't worry too much , they work with the espresso, especially with the one a bit lighter, the other is more ebony, almost black, shows less wood grain. If your other woods show wood grain - it's nice to continue that in the rest of the wood finishes.
I suggest interesting pendants above vanity when you find, instead of sconces - more surprising look, good for applying make up, stylish. Lowes has better selection then home depot for pendants.

Can you paint the wood trim the color of the walls or in white/offwhite?

I don't think the trim will took too bad with the vanity, but the door might be a bit much. You can get 6 panel primed doors for about $50 and you could paint it white or whatever color the doors down the rest of the hallway are. Or a large mirror on the back would mask a large portion of the door. I just worry about such a large hunk of the off-wood color.

I have had to deal with the same issue recently and decided to work with the color of the wood that was in there. You could always sand down the woodwork and stain it...

As for vanities, I ended up getting one from home depot because it was the right color, fit the tiny space we had for it, and had storage. I did look extensively before that though. I think bathroom reno is something which needs special attention and we need to decide upon the color and materila wisely. Vanities would look good in any color i guess. For the counter tops i would suggest to go for a darker color. You can get vanities from http://remodelproducts.com they have a great collection at reasonalbe price.
