I had plans for stuffed peppers tonight, just a standard ground beef/rice mixture stuffed into red and yellow peppers.

The boyfriend freaked out and was like "that's fine if you want to make that, but I'm not eating it". Instead, he wants to do the stuffed peppers with.....fish?

Does that even make sense? He insists that I can just pan fry the fish, mix with the rice or maybe some breading, throw in some italian seasoning and cook as I would with the ground beef.

In my head, it sounds really super gross but I'm not sure if I'm just being pissy because, well, I'm pissed off because I'm stressed about his food demands. With him trying to finish his thesis I'm doing even more of the housework and cooking and at the same time he has decided to completely change his diet, which just means more work for me. I'm about four steps from asking him if he is is allowed cheese on his new whine diet....

Anyway, sorry for that tangent. Does fish stuffed peppers sound like it would work? Any suggestions for how to go about this?

Well, rice and fish are okay together. But I'm curious how the tomato sauce in the peppers would taste. I've been a vegetarian far too long to be making a solid recommendation, but I would think if you changed up the sauce a bit it would be okay.

A part of me wants to say just make it and let him figure out something else to eat. Other option that might work better than fish is ground turkey. Another option is crumbling up canned Alaskan salmon. If you do make it with fish and it turns out well, please share the recipe!

I'm not sure... but what if you went a more Asian route instead of fried? fish, rice, soy sauce, ginger, maybe some lime juice and cilantro?

Is there a reason he wants to do fish? Does he not like beef, or does he jut feel like eating fish?

A part of me wants to say that he just wants fish because he's being an asshole but the real reason is because he wants to eat healthier and beef sometimes upsets his stomach (which never stops him from eating steak or burgers...).

I think the Asian route might work, actually.

D: I'm tempted to just tell him to eat cereal if he's going to keep complaining about what I cook for him. I'm very, very, very tempted. But I'm trying to be supportive, even if it means that I have to step out of the room every now and then to roll my eyes. That recipe you posted doesn't look half bad, actually. I did try googling fish stuffed peppers but the first recipe that popped up involved cream of mushroom soup and I got all grossed out and stopped looking.

Yeah, that's a weird request, has he never tried peppers stuffed with beef or chicken?! Where is he from?
HOWEVER:))) Think of a fish recipe that features fish ( oven roasted/grilled/pan roasted) on the bed of rice & roasted vegetables, among them peppers...so, basically, on the fork the bite will be the same...although you need fished minced...hm...yeah, still weird...I can see shell fish though: crab meat or shrimp stuffed inside a pepper...with cilantro and rice or dry herbs...hm...

I want to know how it turned out too! I miss having stuffed peppers, so if what you did worked out, I'd love to try it.

BTW -- don't know if I ever told you, but I think I bought every moosewood cookbook published on your suggestion ;)

Well.

The boyfriend was a complete and utter ass on the way home (seriously, I better get a very fancy necklace or something when he finally defends his thesis in October) so I ate cereal for dinner. I have no idea what the boyfriend ate.


I think I will try the fish and peppers thing though, perhaps tomorrow or this weekend and I will definitely let you all know how it goes.

D: I love Moosewood! I'm so glad that you've been enjoying them. I actually got Elle the cookbook for our Secret Santa one year on here. :)
