I found this recipe on thekitchn.com & made it this past weekend for a party...
I doubled the recipe & used veggie stock instead of chicken (i have lots of vegan/veggie friends) & it was such a hit, that I thought id share.


Crushed White Bean Spread with White Truffle Oil

Makes about 1 cup

4 cups chicken broth
2/3 cup dried great Northern beans, soaked overnight
3 cloves garlic
1 bay leaf
Kosher salt and freshly ground white pepper
3 tablespoons extra-virgin olive oil
3 tablespoons thinly sliced scallions
1 tablespoon chopped flat-leaf parsley
1 tablespoon white truffle oil, plus more as needed

In a medium pot, combine the broth, beans, garlic, and bay leaf and bring to a boil. Lower the heat and simmer until the beans are tender, about 45 minutes. Season the beans, to taste, with salt and pepper. Cool in the liquid. Drain the beans, reserving the garlic cloves.

Place the beans in a bowl and coarsely mash with a potato masher. Add the garlic and continue mashing. Mash in the olive oil, but keep the mixture fairly coarse. Season with salt and pepper. Stir in the scallions and parsley. Spoon into a serving bowl and drizzle with white truffle oil. Serve the spread with crostini or little crackers.

ah! I just got some white truffle oil from zingermanns!!! thanks for sharing! oh, and when you get a chance (if you havent already) order some truffle fries at jolly pumpkin on main -- YUM!

It's Spice Merchants, in the actually Kerrytown Shops building, not the area in general. They sell both black truffle sea salt and white truffle sea salt, both of which are out of stock, according to their website.

Here is what it says on their site about the black truffle salt.

Italian sea salt mixed with luxurious dried black truffles harvested from the Abruzzi region of Italy.  This aromatic and superbly flavored salt is wonderful for egg dishes, pasta, buttered popcorn, seafood, fresh cut tomatoes, bruchetta and poultry.

The site is: "www.spicemerchants.biz"

By the way, Materials Unlimited in Ypsi is up for sale. So, if you think you may need some items for the new place, I'd get over there soon. The owners are trying to sell the building and the business together, but in this economy, it will be a hard sell. I will hate to see that place go.

Thanks for the info -- I know the Kerrytown shops building.  Perhaps I can find the salt elsewhere online.

I was just at Materials Unlimited last weekend and bought a swinging door for the kitchen/dining room.  I had no idea they were going out of business...  I'd hate to see them go too!  Appreciate the heads up -- maybe I should have haggled harder...
