SUggestions for what to add to "13 bean soup mix"??
Permalink Closed

I've had a "13 Bean Soup Mix" (see link) sitting in the cupboard for months and I need to use it before moving out. I have the beans soaking right now but dont know what to add to the soup to make it yummy. ANy suggestions on veggies and seasoning? (no meat or dairy, please).

onions
garlic
celery
carrots
canned diced tomatoes
oregano
bayleaf
thyme
salt and pepper
diced up red or yellow bell pepper
maybe shredded cabbage or spinach at the very end

I might also add some spicy sausage but I know you said no meat

The only other thing I can think of is to cook it in a simple vegetable broth and stir in pesto.

I typically use that mix to make a very beany chili. So, chushed tomates, a little tomato paste, peppers, onions, garlic and every spicy spice I have in the cupboard. Then, cilantro on top with raw peppers and tomates when I serve it to take down the spicy factor.
