inspired by a menu featuring roasted peppers with salami as an appetizer, i decided to create my own healthy version at home.  i sauteed some yellow bell peppers (but you could use any color) in a tbs of olive oil, added a bit of balsamic vinegar and some greek seasoning, then added a handful of turkey pepperoni (quartered).  after i sauteed it a bit and put it in a bowl i added some fat free feta and mixed together.  it was yummy (and the pepperoni added protein)!


next time i'm going to try it with store- bought roasted peppers in a jar.

It's sorta like an antipasto salad, which are yummy, but I only ever get them from trashy pizza places so are coated in oil.

You might like a Panzanella salad, this one is from Epicurious/Gourmet magazine.

Ingredients


  • 3/4 pound day-old crusty peasant-style whole-grain bread, cut into 1-inch cubes (about 6 cups)

  • 2 large tomatoes (about 1 pound), trimmed and each cut into 8 wedges

  • 3/4 cup sliced unwaxed cucumber

  • 1/2 cup sliced red onion

  • 1/2 cup extra-virgin olive oil

  • 2 tablespoons red-wine vinegar

  • 10 fresh basil leaves, shredded


Preparation



In a serving bowl stir together the bread, the tomatoes, the cucumber, the onion, the oil, the vinegar, the basil, and salt and pepper to taste until the salad is combined well.

My family makes one from Cuisine magazine, which I couldn't find online. But, it has toasted pine nuts, mozz cheese, and bell peppers too (we also chop everything into a rough chop). I believe we also throw garlic and capers in the dressing.

It would also be good with some salami in it.

This has become a familt favorite and my sister and I request it all the time when we are having dinner at my parents place. It can be a pain to make with all the shopping, but I think it is well worth it, and the left overs the next day are really good too.
