With several people resolving to eat better/get healthier/make changes, I thought we could help each other by posting some menus and ideas.
Here's my day in food:
Breakfast, tea with soy creamer, a small amount of Nature's Path granola with flax seed in rice milk. Not enough. Was really hungry by lunch.
Two cups of office coffee (surprisingly it's not that bad). A lot of water.
Lunch, mmmm, sammiches. A veggie sandwich from Whole Foods on rosemary ciabatta with dijon mustard, vegenaise, lettuce, tomato, cucumber, pickle, onion, jalapeno, avocado. Water.
Dinner will be fairly light and simple: a big green salad with mushrooms, more cucumber, more tomato and some kidney or garbanzo beans thrown in. I'm also making roasted purple potatoes from the farmers' market. I'll make a salad dressing with ginger, garlic, olive oil, and nama shoyu. Probably some white wine with dinner.
Dessert, if I stay awake long enough: Cherry Amaretto Coconut Bliss ice cream (made with coconut milk and agave syrup instead of dairy/sugar).
Carrie Bradshaw: The fact is, sometimes it's really hard to walk in a single woman's shoes. That's why we need really special ones now and then to make the walk a little more fun.

KFC Takeout I think it was called the tailgate family dinner or something like that. Original recipe chicken, buffalo wings, mashed potatoes and gravy, coleslaw, bisquits, and half gallon Pepsi. Quesadillas We decided to finally try the quesadilla maker that had been sitting unopened in the box for over two years! I put in chicken, fiesta blend cheese, red bell pepper, and onion.
Tator Tot Casserole Anybody ever watch 18 Kids and Counting?
Shake 'n Bake Chicken I hadn't had this since I was a little kid and finally decided to make some. I found a ranch one, yummy! I served with macaroni salad, deviled eggs and olives.
Beef Stew My mom made this one.
For lunches I'm pretty lazy. I usually just have a frozen entree if I don't have any leftovers. The one thing I did make was:
Grilled Cheese Sandwich I make mine with whole grain bread, chicken, and swiss cheese.
Breakfasts are always the same. Instant breakfasts in chocolate. Sometimes on days that I don't have school I might have a banana or a nutrigrain bar.
Hm. Let's see. I'm a grazer, and I munch pretty much on the same stuff every day...
this week, I've been eating:
breakfast smoothies of banana, blueberries, soy milk, and orange juice raw almonds cashews hummus with celery guacamole with celery canned organic vegetable soup popcorn oranges grapefruit mashed potatoes (mashed with soy milk, earth balance buttery spread, and S&P)
Monday's dinner was a baby bella, green pepper, fried tofu, cashew, and soy vey sauce stir fry (I love soy vey -it's from trader joe's)
Tuesday's dinner was fried mushroom & onion potato patties (using mashed potatoes) with steamed asparagus
Wednesday dinner involved gobbling up a bunch of guacamole with celery in front of the tv.
When I say "fried" it means a lightly oiled pan - no butter or deep fry.
Don't know what I'll eat tonight...

We've been eating a lot of soup this week - BF is sick AND we had a snowstorm, so for about a day we weren't allowed on the roads and I had to make do with what we had. I just threw everything I had in a pot (great way to use up some rice and veggies that didn't have a lot of time left) and let it cook for a while.

Oh, I have some leftover brown rice - I never think of adding it to soups, so maybe I'll make a mushroom/rice soup tonight. Great idea, Ttara!
See, this thread is helping already...well, me anyway.
ETA: Here's the basic recipe for the soup I made - I added rice and used a portobello, some shitake, and some crimini plus half a packet of dried wild shrooms I had in the pantry.

Monday's dinner was southwestern sweet potatoes with corn, black beans, and lime on top of brown rice w/cooked spinach.
Tuesday was Sloppy Joes made w/TVP - I was suprised at how good they turned out!
Wednesday was mushroom and barley soup and WW bread w/white bean rosemary spread.
Thursday was veggie sushi rolls .
Today so far I had sourdough toast w/smart balance spread, a grapefruit, and coffee w/vanilla soy milk; leftover SW sweet potatoes w/ a few baguette slices and an orange; and tonight .... maybe baked potatoes w/assorted toppings? I meant to make split pea soup in the crock pot today but now it's too late!

Tea and soy yogurt for breakfast Tempeh burgers from a vegan macrobiotic cafe for lunch (his choice) Dinner is seitan, eggplant and spinach stir-fry with the peanut sauce I posted a while ago Dessert is a vegan triple chocolate cake from Fabe's Bakery (local, but they ship, if anyone cares) because we spent the afternoon at the Norton Simon Museum so nobody was baking a cake today...
Monday night we had fajitas made with lots of veggies and marinated chicken, and a green salad.
Last night we had pork tenderloin slices baked with sauerkraut, apple, onion and red potatoes, served with snow peas and turnip.
Tonight we are having maple marinated salmon on the barbie, with a vegetable stirfry and rice.
Tomorrow we are having spaghetti with homemade marinara sauce, garlic bread and a caesar salad.
Friday we are visiting friends so we don't know...they are good cooks, tho, so hopes are high.
Saturday we are having meatloaf with veal, pork and beef and lots of ground-up veggies in it to make it moist and delicious, with mashed potatoes and baby green beans.
Sunday we always just have snacks: hummus with seven-grain bread, cold meat, thin-crust individual pizzas, whatever.
I'd be glad to. Here it is, along with our decadent alfredo sauce (not for diet days!)...
Marinara Sauce
It makes a ton but it freezes well.
¼ cup brown sugar 6 bay leaves ¼ cup garlic powder ¼ cup curry powder 4 tsp crushed chilis ¼ c. oregano, chopped ¼ c. basil, chopped 6 garlic cloves at least, minced 6 onions, chopped 3 5-oz cans tomato paste 2 2z cans chopped tomatoes 5-6 celery stalks, chopped 2 sweet peppers, chopped 2 lb. medium ground beef mushrooms
Brown and drain the meat, add all other ingredients except for the basil and mushrooms and simmer for at least four hours. Shortly before serving, add the basil, parsley if wanted, and sliced mushrooms.
Decadent Alfredo Sauce
1 cup heavy cream ¼ cup butter 1 tbsp cream cheese ½ cup freshly grated parmigiano reggiano 1 clove garlic, grated
Combine butter, cream and cream cheese in saucepan, simmer until melted and well mixed. Ad parmesan and garlic. Simmer for 15-20 minutes on low. Season with salt and pepper. Add chopped basil, grilled shrimp or scallops, steamed asparagus or whatever your fancy dictates, and fresh pasta. Hoo boy. Serves two.
I meant to add that I've made the sauce for vegan friends -- without the meat but with lots of extra mushrooms, especially chopped portabellos, and it was great.

D, try Amy's cheeseless pizza. It has roasted/carmalized onion, mushrooms, roasted red peppers and artichokes. It is super yummy. You won't miss the cheese. It comes in a personal size, and a "full" size that DH and I split. I can't eat 1/2, but he will polish off the rest.

I will give that a shot. I'm also going to scour my new cookbooks for some pizza recipes. I figure if I load it up with enough stuff, it will be good. Just pizza sauce and one item doesn't quite do the trick...

D, my favorite cheeseless pizza is Thai-style. Peanut butter for the sauce, thinned w/some soy sauce, hoisin, and sriracha until it's a texture you like, topped with thinly sliced red and orange peppers, green onions, cilantro, and juilienned carrots. It would be weird with cheese anyway, so yo don't feel like it's 'missing'.

BF and I made pizza last night, too! We made two small, personal pizzas because we both wanted different sauces and toppings. I used this dough recipe I found on AllRecipes.com - quick, simple, and delicious! http://allrecipes.com/Recipe/Pizza-Dough-I/Detail.aspx
INGREDIENTS
* 3 cups all-purpose flour (I used 1 c. whole wheat and 2 c. all-purpose) * 1 (.25 ounce) package active dry yeast * 2 tablespoons vegetable oil * 1 teaspoon salt * 1 tablespoon white sugar * 1 cup warm water (110 degrees F/45 degrees C)
DIRECTIONS
1. Combine flour, salt, sugar, and yeast in a large bowl. Mix in oil and warm water. Spread out on a large pizza pan. Top as desired. 2. Bake at 375 degrees C (190 degrees C) for 20 to 25 minutes.
Because we made two small pizzas instead of one large one, they only took 15 min to bake. We used mozarella cheese, sauteed mushrooms and onions, tomatoes, bell peppers, and chicken. Forgot to pick up olives I used pizza sauce and I actually have no idea what sauce he used, because I was way too busy decorating my own pizza to pay attention!
