I've only just started attempting cookies, it's a big step for me.
I did make chocolate ginger snaps which turned out pretty awesome, I think. I've also made double chocolate chunk cookies which everybody seems to love.
I've actually found that Martha Stewart's website is great for cookie recipes. There is a ton of recipes on there and for the most part they are relatively easy to understand.

I've been making croissants (relrel I promise that recipe is coming soon! I've been lazy) and since I'm having a lazy snow day today I might make some mocha macarons. I'm apparently feeling very French lately. lol
Anyone have a favorite Christmas cookie recipe? I haven't found one that I love yet. Just the simple, roll-it-out and cut-it-out and decorate it kind of cookie.

My favorite are almond butter kiss cookies... Like the PB kind, but I use really nice dark chocolate with almonds as the kiss instead. They are super good.
I'm going to be using my new mixer this year for cookies! Yay! My big cookie project for the holidays is going to be rainbow cookies (also known as tri colored cookies). They are so incredibly good!

For thicker cookies, look for a butter cookie recipe. These can also be adjust for flavorings- add lemon zest or cinnamon. Most butter cookie recipes can be chilled and then rolled or made into balls for thumbprint cookies.
For thinner cookies, look for a sugar cookie recipe. This are great with a light egg-wash and sprinkles. This are best when rolled out really, really super flat-- I'm talking 1/8th inch thick. This is best to do when the dough is really chilled.

Hah! I've actually been trying really hard not to bug you about it. I've looked up one from my bread-maker book but it seems really super involved and I've got my fingers crossed that your's is easier since it sounded like you made them in one morning.

yes! here's one of my favorite cookie recipes ever. my mom makes them every year for christmas and every year for valentines day.
Cut Out Cookies 3/4 c. butter 3/4 c. shortening (crisco) 2 c. sugar 2 eggs 2 tsp. vanilla 4 c. sifted flour 1 tsp baking powder 1 tsp baking soda icing, if desired
THIS IS A LARGE BATCH. YOU MAY WANT TO HALVE IT.
350 degrees for 8-10 minutes.
cream butter, add sugar, beat in egg and vanilla until fluffy. add flour, powder and soda. mix until smooth. grease pan. chill dough until firm (several hours or overnite). roll and cut into shapes.
i roll my cookies thicker and bake them 6-7 minutes so they are thicker and softer. if you like them crunchier, just roll them thinner and bake them longer. i use a simple combination of powdered sugar and milk for the icing.
my other favorite christmas cookie:
Candy Cane Cookies 1/2 c. shortening 1/2 c. butter or margarine 1 c. powdered sugar 1 egg 1 1/2 tsp. almond flavoring 2 1/2 c. flour 1/4 tsp. salt red food coloring
375 degrees for 7-9 minutes soften butter, mix with shortenin and sugar, add egg, salt and almond flavoring, then flour. grease pans. divide batter in half, add red food coloring to one half, roll and shape into canes.
i made both of these types of cookies to give to our mailman and our apartment complex staff and everyone raved about them.

Ingredients

butter

powdered sugar

Directions
Heat oven to 400 degrees F.Mix together butter, 1/2 cup sugar and the vanilla.Work in flour, salt and nuts until dough holds together.Shape dough into 1-inch balls.Place on ungreased baking sheet.Bake 10-12 minutes or until set but not brown.While warm, roll in confectioners' sugar.Cool.
