I have the biggest sweet tooth, but I am trying to eat better. What do you guys eat to trick your sweet tooth?

Fruit usually does it for me. I like to get the pre-cut mixed fruit in the little containers. If you want something that seems more like a treat how about a frozen fruit bar? Also I love dried fruit, especially apples. I used to dehydrate my own apple slices dipped in lemon juice. Better than candy!
I have a sweet tooth, too . I keep things like diet cream soda, 60-cal chocolate pudding cups, and fudgesicles around so I have a relatively healthy option. Frozen grapes are also good - sweet but each one takes awhile to eat. Sometimes for dessert I make fruit crumbles - frozen or fresh fruit with some splenda and cornstarch (if it's really juicy), topped with a combo of oatmeal, flour and spices and a little margarine or olive oil. Baked and topped with some low-fat ice cream or froyo!
Yogurt parfaits are also yummy and healthy - FF plain or vanilla yogurt topped with defrosted mixed berries. I usually top with a bit of (traditional) Fiber One cereal, but uncooked oats or Kashi cereal works well too.

My BF has an issue with a sweet tooth as well. But only as an after-dinner snack. He insists on having something sweet after dinner. He generally likes cookies, but that's just really too fattening/sugary.
What he has been doing is what wicked suggested: a small piece of really good chocolate. You can do dark chocolate or perhaps something with a fruit flavor or maybe caramel. Trader Joe's has really good chocolate, up by the registers.

Well, first of all, I try to keep sweets out of my house. So if I get a craving, I have to go all the way to the store, or spend an hour baking cookies. I'm usually deterred by the effort it would take! If I'm at work I chew gum. Trident (I think) makes some with tasty goo inside, like strawberry-kiwi or something, and the flavor lasts a long time.
I also like white tea with some honey in it. It's not a substitute for a gooey brownie, but it's just sweet enough to calm me down on my must-have-sugar rampage.
