Potato latkes are *delicious*. Maybe try Googling for Ukrainian recipes? They are big on potatoes. It was my Ukrainian friend who fed me latkes for the first time when I was little.

oh i love latkes! my mom used to make them every friday during lent when we were little.

this is similar to the recipe that i make except that i usually add a few spoons of flour.

I don't know a good latkes recipe, but I just made these for a holiday party and everyone left w/ the recipe. They are now offically called "my famous mashed potatoes" lol!!! They are like twiced baked potatoes, not so healthy...I don't like to eat them when I make them cuz I know how bad they are for you after you see all the stuff that goes in em...I enjoy them best when my mom makes them! ;)


My “famous” mashed potatoes



2 bags of red bliss potatoes (6 lbs)


7 garlic cloves


1/2 container of sour cream


¼ lb (one stick) of butter


1 cup of milk


1 package of cream cheese


julliened carrots and celery


thinly sliced onions


olive oil


 


cut all potatoes in half (if smaller) or quarters (if larger) (leave skins on)


boil potatoes w/ 5 cloves of garlic until potatoes are soft


drain and put in a big bowl (w/ garlic too)


put in cream cheese, butter, sour cream and milk


mash well, can be lumpy though



while you are boiling the potatoes sauté the carrots, celery and onion w/ 2 crushed garlic cloves and olive oil



put the mashed potatoes in a casserole dish



layer the veggies on top



bake uncovered for 30 minutes on 350 or until veggies on top get a little golden.

Here is a tip.  Use sweet potatoes with a little cinnomon and nutmeg.  The sweet pototoes are a healthy option and they taste kinda sweet!  I cooked for the first time on Thanksgiving for my polish family and this is what I made.  It was a hit!

Twice baked potatos are great.  You should clean the potatos first, poke holes in them with either a fork or knive and cover with each with plactic wrap and bake, depending on your microwave for about 20 minutes.  When done peel of the skin, place in a large bowl and add salt, pepper, real bacon bits, chives, sour cream, little milk and butter.  Mix together well.  You want to add enough sour cream, milk and butter so that it all creams together well.  Spread in a pan and top with lots of chedder cheese.  Bake on 375 for 30 minutes or until cheese is melted.  Yummy!!!!
