Fresh From The Vegetarian Slow Cooker, The Enchanted Broccoli Forest, The New Best Recipe, World Vegetarian, A Year in a Vegetarian Kitchen, Vegetarian Cooking for Everyone, How to Cook Everything, Vegetarian Meat and Potatoes, Fields of Greens, and Fresh Food Fast are all either ones I have and love or ones that come highly recommended to me by veggie friends.
I'd recommend taking a new cookbook out of your local library every few weeks, going through it and tagging all the recipes that you'd like to try. Then if you like the ones you end up making you'll know it's worthy of being bought at all! There are definitely different styles of vegetarian cooking, so buying a whole book before you know if they style is one you think you'd like can be risky.

I would second The Enchanted Broccoli Forest as well as the other cookbooks by this author. Also, How to Cook Everything Vegetarian is good. I like the magazines because they feature the foods you want in the season, and are pretty manageable.
