I found a great deal on a cruise for me and DH anniversary.

Question is - are they really all-inclusive? I am on a REALLY tight budget. I know that drinks are not included , but is there anything else I should be aware of??

I'be been on a few, and other than drinks (I think iced tea was free) and spa treatments and such you're pretty set. You might want to have some money, but you can definately have a good time without spending a lot more.

Yeah everything except the drinks, spa activities, and the excursions you take at the stops.  Depending on where you are going, the excursions can be worth taking or not at all.  Costs can also very (i.e. in Puerta Vallarta the excursion of ziplining, horseback riding, etc. was around $100, whereas in Cabo we only went parasailing for cheap).  
We didn't take advantage of the spa and didn't miss it.  Drinks-wise, we didn't really drink too much.
Cruises are known for the abundance of food, and don't miss out on the midnight chocolate bar.  You will not go hungry! Have fun!

Drinks, excursions, spa, tipping not included.  On the cruises I've been on, they automatically add a certain percentage for various attendants to your overall bill and you receive it the day before the end of the cruise.  The tipping amounts are the 'standard suggested' amount and can be adjusted when you settle up your bill if you think it's too high, but you should be able to find their policy amounts online and therefore be able to figure how much the tips would cost you. 

The food is way better than the drinks.  Our days went like this:  Order coffee and fruit to our room in the morning while getting ready; go down to buffet breakfast; go to pool (or go ashore); go to buffet lunch; back to room to shower/nap; go to fancy dinner; go to comedy show/ other venue; hottub; hit midnight buffet.  That's 5 meals a day, in case you're counting!
