what would you do with some leftover goat cheese?

I purchased a big thing of (expensive!) goat cheese for a recipe recently (btw: chicken and black-bean guacamole tostadas -- they were great and easy -- let me know if you want the recipe!). Now I have tons of goat cheese leftover. What should I do with it?! I never really cook with it and am overwhelmed by all the different options. I would especially appreciate recipes that are easy and not too expensive ingredient-wise...

Lots! But it's late so my easy suggestion is to boil up some shell-shaped pasta, drain it, pour it back in the pot with goat cheese, some halved cherry tomatoes or diced tomatoes, plus fresh basil. Keep stirring until it's melty and blissful. You can turn the heat back on extremely low and add some olive oil if it needs it, then black pepper.

I love goat cheese on a salad with strawberries or blueberries, toasted walnuts, and oil and vinegar.

You can also fry up little balls of goat cheese and put them on a salad as well and it's SUPER good. First, roll the goat cheese into little balls (like the size of a dime or quarter) then dip them in egg whites, then in bread crumbs until they're covered. Then stick them in the freezer for about 15 minutes. In the mean time, you can do some other cooking and prep. While the goat cheese is the freezer, heat up a skillet, then right before you pull the goat cheese out of the freezer, put a few good glugs of canola oil in the pan and drop the goat cheese balls in the heated oil. They should start to sizzle and turn brown. Turn them around a little bit until they're golden brown all the way around. Let them drain for a few minutes on a piece of paper towel and then serve them warm on a salad. It's super good and really easy.

I also love goat cheese on salad. Just some goat cheese, some shrimp cooked with a little garlic, mixed green salad and some cilantro lime vinagrette. YUM!

I made a pizza once with goat cheese that was DELISH.

appetizers made with goat cheese and smoked salmon are nice.  My husband hides a dalop of goat cheese in his hamburgers (grilled).  Very good.  See if you can find a LeGassi (sp?) recipe for zucchini pancakes with chevre and some sort of tomato salsa.  I have never made it, but it sounds really good.

I would use it with everything. A few years ago, I had a delicious goat cheese sandwich at a restaurant, with field greens, tomatoes and olive tapenade on crusty bread. Whenever I buy good bread, I make something like this, not always with those exact ingredients.

It wouldn't go to waste in my house - even the cats love goat cheese!  But seriously, I love pasta with cherry tomatoes, goat cheese and torn up basil leaves all tossed together.  I also love arugula, goat cheese and avocado in a salad - with an olive oil and lemon dressing.  Or, a pesto, tomato and goat cheese grilled sandwich - happy eating!

Edited to note that I didn't note Suasoria's comment until after, but I have to agree that goat cheese pasta is one of the tastiest thing ever - since we suggested the identical dish!

I like spinach salads with cranberries, almonds, and goat cheese.

I also like baked goat cheese with marinara sauce to dip bread into. 

Sometimes I sprinkle it on steak--this is really yummy with a balsamic vinegar glaze too.

I will add it to marinated tomatoes (sliced or wedged tomatoes marinated with olive oil, vinegar, parsley, garlic,a nd basil).

Just wanted to let you ladies know that I finally used up my leftover goat cheese -- in a pasta with basil and halved tomatoes as Suasoria and Kittenheels suggested. I also added sliced kalamata olives. Delicious!!! Thanks.
